Venison in cabbage, or "rådyrikål"!

I made this unusal twist to a very traditional dish yesterday, and it turned out absolutely delicious😋 Based on a dish often referred to as Norway's national dish, "fårikål" (mutton in cabbage).
.
So with a little margarine in a cast iron pot, I layered venison chunks, cabbage, green apple wedges, fresh rosemary, whole black pepper, juniper berries, salt and a little wheat flour. Added a little water and simmered for approximately three hours. To go with this, I boiled a few potatoes and toasted some hazelnuts with rapeseed oil and a venison spice mix. Finally added some lingonberry jam.

The difference from the national dish is that it has mutton instead of venison, and does not have apple, rosemary, juniper berries or nuts (flour is optional). Oh, and I added the margarine because this venison was a lot leaner than the mutton usually used. It was very similar, but at the same time quite different. Delicious none the less😋

Quite spicy and oh so packed with flavour! Also one of the nicest looking dishes I've made in a while. A healthy vegetarian dinner.

With rapeseed oil, I pan fried onion, garlic, chili pepper, raw sweet pepper, grilled sweet pepper, sundried tomato, chipotle chili pepper. Added tomato puree, chickpeas and chopped tomato. Simmered while adding honey, tabasco chili sauce, cumin, piri piri chili powder and salt. Then poached eggs and mozzarella. Garnished with parsley and toasted pumpkin seeds. Served with lightly toasted whole grain bread. YUMMY!

Boiled and pan fried tiny potatoes with salt and pepper. Gravy made of venison and veal stock, goat milk, goat cheese, red wine and thickened with corn flour. Salad with fresh iceberg lettuce, oxalis (some cultivar of wood sorrel☘), pumpkin seeds, sautéed chickory lettuce and a drizzle of honey. Served with cloudberries😋

A new twist to a traditional dish!

Potato dumplings like this have at least 11 Norwegian names including "raspeball". I know they're used in all of Scandinavia, and known as "kartoffelknödel or -kloße" in Germany.

I mixed mashed boiled and raw potato with wholewheat flour, juniperberries, parsley and venison spice mix. Formed balls, added lightly seared venison chunks as cores and simmered in venison stock for 35 minutes. Also made a kohlrabi mash with onion, light yogurt, mustard and a pinch of salt. Plus a mixed wild mushroom stew with salt, pepper, goat milk, goat cheese (chevre) and Castello Blue cheese. Used potato starch for thickening. Served with cloudberries.

It tasted great, and I'm pretty pleased with my first try at making "raspeball".

Squiggly squiddy spaghetti salad!

Had a couple of squid tubes in the freezer that I wanted to use. For once I managed not to overcook them, so it turned out great, and almost not rubbery at all🙃
.
Sliced and pan fried squid and dried seaweed. Mixed it with some boiled spaghetti and my mother's homemade salsa (which I spiced up a little with hot sriracha chilli sauce). Let it cool down a little, and served with fresh iceberg lettuce, light yogurt and and some feta-like cheese.
.
And I've got plenty of yummy leftovers for tomorrow.

Spent a night at @hotelullensvang in beautiful Hardanger!

There is actually a chance that I might move to this breathtakingly beautiful place. I was at a job interview nearby, and I feel it went fairly well. So now I just have to wait for the decision.

The hotel was really nice. Being there off season and from a monday to tuesday, I was the only guest that night!

This morning's big fishy breakfast!
.
Three slices of whole grain @polarbrod with low fat margarine. 
1: arugula and smoked and peppered mackerel.
2: iceberg lettuce, light yogurt and smoked salmon with caraway seeds, fennel seeds, coriander, aniseed and more.
3: red beetroot salad and pickled herring with onion.
.
Also had a soft boiled egg with a pinch of salt and a drop of truffle oil. And of course a glass of milk and a cup of coffee!

Miso breaded deer and ajvar sauteed vegetables!

I did this highly successful culinary experiment the other day. It turned out absolutely mouthwateringly (sic) delicious! With tastes from Japan, Turkey, Norway and more. Yumm!

Sauteed chickory lettuce, champignons, onion, tomato and cabbage in rapeseed oil. Mixed in Turkish ajvar (mashed baked capsicum and aubergine++).
.
Smeared Japanese miso paste (fermented soybeans) all over roe deer steaks, covered them in wholemeal flour and then pressed them in sesame seeds. Pan fried in rapeseed oil.

Garnished with some arugula and voilà; dinner served!

Hunting in snowy Norway!

Just back from a hunting trip with my father and our dog Bonnie, a Beagle. We didn't get anything today. I saw a nice roe deer, but it was slightly too far away. I need to be very sure of a good shot before I pull the trigger. Had a nice day anyway, and brought some delicious dates and caramel cookies! The dates looked kinda out of place out there in the snow😛

This venison salad! Perfect weekend dinner.

Today I recreated one of my favourite dishes - the venison salad I posted 7 months ago. So delicious it almost hurt.
.
A big chunk of a roe deer thigh, quickly pan fried in butter with venison spice mix (see photo for contents). Sliced to bits and mixed with iceberg lettuce, leek, dried cranberries, salted and toasted pumpkin seeds, chevre cheese, a drizzle of flax seed oil and some great honey I bought off a viking at the reenactment market thing this summer. So gooood!

Made enough for three, though I am only one, so I'll have leftovers for lunch and dinner tomorrow!

Maybe not the prettiest dish, but so delicious!

Pan fried chicken thighs with onion, garlic, chipotle, salt, pepper, coriander, cumin and rapeseed oil. Then mixed it with crushed tomato, lentils and white beans. Also added some chicken stock, sundried tomato and fresh thyme. Simmered for about an hour. Added a splash of yogurt and simmered for another 10 minutes.

It turned out very well, very savoury and a little spicy.

Romantic dinner for one.

I made this last weekend, and it was quite delicious. Had it all to myself, but at least I can share with you here.

Duck thighs baked with onion, carrots, honey, rosemary, juniper berries, salt, pepper and rapeseed oil. Mushrooms stew  with milk, yogurt, brown goat cheese (a sweet Norwegian spicialty) and some potato starch. Green peas with truffle oil, flax seed oil and sesame seeds. Served with cloudberries and flatbrød (literally translates "flat-bread", another Norwegian specialty).

By the way, if anyone has noticed my absence lately, it's just that I'm having some trouble with the WiFi connection on my phone, so I have to save my data...

Making some roe deer stock! For soups and sauces.

The hunting season has paid off so far. Got a roe deer buck the other weekend. And of course, I want to use as much of it as possible😊

All the bones, tendons, fat and extra scraps of meat are boiled in 6 l of water for several hours. With two carrots, a clove of garlic, one shallot, a handful of juniper berries, a little black pepper, two table spoons of salt, and a few twigs of rosemary and parsley. Dis gon b gud! Certainly smells amazing!

I have been listening to "Eagles of the Empire", a book series by Simon Scarrow on Audible. I was inspired to make this meal with things I believe they ate in the Roman Empire. Some of it they've had in the books, the rest I read about on Wikipedia.

Bread torn and dipped in olive oil mixed with oregano and basil, cured ham, kalamata olives, goat cheese (chevre), figs, dates, prunes, apricots and grapes. Delicious finger food, plus a glass of Spanish red wine (el Pacto).

Not sure what to call this, except yummy! Just nori rolls, maybe.

Made a thin omelette with eggs, miso paste, garlic, ginger and sunflower oil. Boiled red lentils, quinoa and vermicelli (bean thread) noodles, then mixed in Thai sweet chili sauce. Grated some Norvegia cheese and rolled it all in nori.

Had a couple of rolls for breakfast, and will have a couple more for lunch/ dinner at work. They were quite delicious, though the chili sauce wasn't sticky enough to seal the rolls as I had hoped. I just have to hold them together while eating.

I love tortillas! Anything can be wrapped!

Stir fried kohlrabi, shallots, oyster mushrooms, and sugar snaps with salt, pepper, soy sauce, sesame oil and sunflower oil. Wrapped it all in wheat tortillas with some low fat yogurt and fried eggs. Yummy!

I actually made this a couple of weeks ago, and haven't been cooking much of instaworth the last week. I'm moving to a new apartment these days, and working the evening shift. Not much time for cooking...

Another delicious vegetarian dinner/ lunch salad👍

A quick, healthy and very tasty salad. Enough for today's dinner and tomorrow's lunch.

With iceberg lettuce, red onion, big white beans, low fat yogurt, spring onion, sundried tomato, grated Norvegia cheese, hojiblanca olives, green pesto, pumpkin seeds, garlic powder, a pinch of salt, a little flax seed oil and a light drizzle of truffle oil. Garnished with some garlic mini grissini. Had a big glass of 'fruit flavoured' sugar free squash on the side. The bottle doesn't say what kind of fruit, but I'd guess apple, pear and green grapes. It is delicious anyway, and cheaper than the brand I usually buy.

I love the steel bowl I used for this. It's big enough to toss a lot of salad, and thin enough not to be very heavy. Besides, it reflects the content so nicely, as you see in photos 3-5. Kinda cool, or what?

That's what I'll call this seafood and mushroom combo. There's no meat, so I guess no 'turf'. But the smurfs, as we all know, live in mushrooms. A big salad for tonight's dinner and tomorrow's lunch.

With funnel chantarelle and dried seaweed stir fried in sesame and sunflower oil. Iceberg lettuce, canned tuna, lentils, toasted pumpkin seeds and pine nuts, sesame seeds, sesame oil, soy sauce, mirin and flax seed oil. Had a big glass of Zeroh (zero cal) strawberry and red orange squash on the side. It was pretty awesome!

I have now established that the seaweed my father gathered for me and I then sundried, is best when stir fried directly from it's dried state. Also pretty good when soaked first. Not so good in soups, ramen etc...
