This combo might seem a little strange at first (blackberries on a pizza 🍕) but I had it at a local restaurant and have been obsessed ever since. You’ve got to give it a try! 😍 Especially because I’m using a new pre-made pizza dough made by @pillsbury that’s by far the best I’ve ever tried! These Sweet Potato Taco Bowls made in partnership with @Pompeian are the perfect chilly weather, after school/work, healthy kind of meal! You can also store the components for this dish separately to make a great weekly meal prep! #TrendingInTheKitchen

Ingredients
•1 tablespoon chili powder
•1/4 teaspoon EACH: garlic powder, onion powder, dried oregano
•1/2 teaspoon paprika
•1 and 1/2 teaspoon ground cumin
•Seasoned salt and pepper
•2-3 large sweet potatoes, peeled and chopped (about 4.5-5 cups)
•1/4 cup Pompeian Smooth Extra Virgin Olive Oil, separated
•1 can (15 ounces) black beans, drained and rinsed
•1 can (15 ounces) fire-roasted sweet corn, drained
•1-2 large avocados
•3-4 fresh limes, separated
•Optional toppings: fresh cilantro, jalapeno, cherry tomatoes, sweet peppers
•1/2 cup sour cream (I use fat free)
•1 teaspoon hot sauce (like Cholula)
•1-2 large limes (1/2 teaspoon zest + 3 tablespoons juice)
Cilantro-Lime Quinoa
•1 cup quinoa (+ 2 cups water)
•1 large lime (2 tablespoons juice and 1 teaspoon zest)
•1/3 cup finely chopped cilantro
•Salt and pepper, to taste

Instructions

1 Preheat the oven to 425 degrees F. Combine the seasoning mixture: In a small bowl, stir together the chili powder, garlic powder, onion powder, dried oregano, paprika, ground cumin and 1 teaspoon salt and 1 teaspoon pepper.  Stir. 
2 Peel the sweet potatoes and chop into bite-sized chunks. Toss the potatoes with 3 tablespoons olive oil and 1 tablespoon + 2 teaspoons of the seasoning mixture. Toss together with your hands until well coated and then bake for 15 minutes. Remove from the oven, toss around and return for another 15 minutes. Remove, toss around and if needed cook for another 5-10 minutes or until sweet potatoes are tender. Remove the tray and add the drained & rinsed black beans, drained corn, and 1 more teaspoon of the seasoning mixture. Toss everything on the tray (The beans and corn will get warm on the hot tray). 3 Meanwhile, make cilantro lime quinoa: Bring 2 cups of water to a boil over medium-high heat. Stir in the remaining tablespoon of olive oil and quinoa and return to a boil. Reduce the heat to low, cover, and simmer until the quinoa is cooked through

EASY dinners are a must have for busy nights and full schedules with school back in session! So, in partnership with @Pompeian I’m bringing you just that — a simple ONE sheet pan chicken dinner! This amazing one-pan garlic parmesan chicken and veggies makes a great easy dinner or simple meal prep for the week. #TrendingInTheKitchen

Ingredients
1 pound boneless skinless chicken breasts
1 tablespoon dried parsley
2 teaspoons dried oregano
1/2 teaspoon EACH: garlic powder, onion powder
1 teaspoon paprika
Seasoned salt and pepper
1 large lemon, juice and zest
5 tablespoons Pompeian Robust Extra Virgin Olive Oil, separated
1 heaping cup (5 ounces) baby carrots, sliced in half
1 and 1/2 heaping cups (1/2 pound) baby red potatoes, sliced
1 large yellow onion, coarsely chopped
1 head (1 heaping cup) broccoli, chopped
1/2 tablespoon minced garlic
Freshly grated Parmesan cheese
Serve over quinoa
Instructions
Chop the chicken into 1/2 inch pieces. Place in a medium sized bowl.

In a small bowl, combine the parsley, oregano, garlic powder, onion powder, paprika, seasoned salt (to taste; I use 1/2 teaspoon), and pepper (to taste, I use 1/4 teaspoon). Stir to combine and then take half of the seasoning mix and add to the chicken with TWO tablespoons olive oil and the zest and juice of 1 lemon. With your fingers, toss the chicken, olive oil, lemon, & seasoning mix until the chicken is well coated. Cover and place in the fridge for 30 minutes (while everything else is being prepped and cooking). Preheat the oven to 425 degrees F. Line a very large baking sheet with parchment paper for easy clean-up. Halve the baby carrots lengthwise, Halve the baby red potatoes (or quarter for large ones), and coarsely chop the onion.

Place the carrots, red potatoes, and onion on the prepared sheet pan. Add another 2 tablespoons olive oil and most of the remaining seasoning mix (leave 1 teaspoon). Toss with your hands to generously coat everything and place in the preheated oven for 20 minutes.

Meanwhile, chop the broccoli into bite-sized pieces. Remove the pan from the oven and toss the veggies and section them off to one half. Add the broccoli to the other half and toss with the last tabl
