I usually like to garnish my fried rice with chopped up green onions or maybe some cilantro but tonight's quinoa fried rice was made with ingredients strictly from my pantry. Fried rice is always a good go-to dish when you have a lot of veggies lying around. This veggie quinoa fried rice consist of chopped carrots, one whole zucchini, 1/2 an eggplant, 1/4 a cabbage, and plenty of sliced mushroom. Healthy eating and happy weekending ♥️

Happy Sunday everyone 🌞Started the day off right by waking up and going for a run with the family! Now finishing it off with a meatless, carb less dinner :) Zoodle spaghetti with homemade tomato sauce, meatless meatballs, chopped mushrooms, and asparagus. Two post in one day, trying to make up for the days I've missed. Tonight's dinner, shrimp crockpot gumbo! I already made veggie gumbo this weekend for a Labor Day party and had a bunch of leftover ingredients so I made gumbo again 😅 6 hours of stewing and the results are delicious and effortless. My kind of meal :)
Shrimp crockpot gumbo
3 stalks of celery, diced
3 cloves garlic, minced
2 shallots, minced
3 tbsp all purpose flour
4 tbsp olive oil 
3 cups vegetable broth
4 Roma tomatoes, sliced into wedges 
1 can (15 oz) kidney beans, rinsed and dried
1 bag of frozen sliced okra
2 small eggplants, chopped
2 cup fresh spinach
3 carrots, diced 
1 pound shrimp, shelled and deveined
3 tbsp Worcestershire sauce 
2 tbsp Cajun seasoning
1 tsp cayenne pepper
1 tsp cumin
Dash parsley
Salt and pepper (adjust for taste)
Paprika and lemon wedge to top
In large pan, add in 2 tbsp oil, minced shallots, garlic, tomatoes, carrots, and celery. Sautéed until golden and tender (10 mins). When finished add to crockpot. In same pan, add in 2 tbsp oil and then add in flour. Brown flour mix and then add in broth, stir in between. Bring broth to boil and then add into crock pot. Add in additional ingredients, other than paprika and lemon wedge. Stir and mix evenly then set crockpot on high and cook for 6 hours or on low for 8 hours. Enjoy over white rice 🍴♥️ Delicious.

Today was one of those days that a ton of curve balls just was thrown at me 😅 but sometimes you just have to roll with it and keep on going... Managed to make dinner though! Tonight's dinner actually landed on #tacotuesday and we actually had TACOS 🌮 ♥️🌮♥️🌮 I love when that happens! Spicy cauliflower beer tacos served with a creamy slaw, fresh sliced avocados, diced tomatoes, and cilantro. We also had quinoa stuff poblanos served with refried beans and corn... you can say I was taking my frustration out in the kitchen 🤣 I hope everyone having a great week! Let's hope the rest of mine is smooth sailing ⛵️

When people change up hummus I cringe a little but I also think it's from my experience. Ginger hummus... not a good idea by the way. This purple thing you see on your screen is indeed purple. Beet hummus might sound extremely strange to most people but trust me, it's delicious. If you want to change it up, this is a perfect recipe for up. 
PURPLE HOMEMADE HUMMUS
2 1/2 cup chickpea (garbanzo beans)
1 can whole beets or 2 fresh whole beets steamed
2/3 cup tahini (sesame paste) 
2 lemons
4 garlic clove
4 tbsp olive oil
1/2 tsp salt 
1/2 ground cumin
Dash ground pepper
Water (~ 1/3 cup)
In large processor, add chickpeas and beets then blend until smooth. Add in tahini, garlic, lemon juice, and seasoning. As it processes add in olive oil until hummus is smooth. Add in water to loosen up the hummus. Do not need to add all of it, depends on how thick you want it. Top hummus with olive oil, fresh ground pepper, paprika, and oregano. Enjoy with veggies or Harvest Snap Crisp!

Trying to keep food bright and fun! Today I had help in the kitchen from my sue chef, my husband ☺️ We had a Mediterranean spread, filled with chickpeas and lots of garlic!! On tonight's post, I wanted to feature Mediterranean roasted veggies 🍴♥️ Great for any dish! 
Mediterranean style roasted veggies 
1 zucchini, quartered 
1 yellow bell pepper, cut into 1 1/2 inch pieces
1 orange bell pepper, cut into 1 1/2 inch pieces
2 cups whole mushrooms, washed and dried
1/2 red onion, cut into big chunks
2 red potatoes, quartered
3 cloves garlic, minced
2 tbsp balsamic vinegar 
2 tbsp olive oil
1/2 tbsp oregano 
1/2 tbsp basil
1/2 tbsp chives
Dash of salt and pepper
Preheat oven to 425F. Prepare in shallow roasting pan and place all veggies inside. In large bowl, add balsamic, olive oil, basil, oregano, chives, salt and pepper and whisk evenly. Take mixture and drizzle over veggies then toss to coat evenly. 
Place in over for 45-50 mins. Halfway stir veggies. Roast the veggies uncovered. 
ENJOY 🍴😊

I think it's funny how people react when I say, "I'm not eating meat."
Them: Like for a diet?
Me: No, like forever.
Them: 😨
Don't worry people, I'm not eating salads or chewing on raw vegetables. I'm eating real, delicious foods that simply have no meat in them... In the past week, I have eaten seafood but mainly vegetarian foods. I feel lighter and more energetic, maybe a little more bloated 😜but I've noticed a difference in my portions (smaller) and my level of fullness (100% full) and I've concluded that VEGETABLES KEEP YOU FULL. 
Today's dinner, a delicious clean-your-pantry-out kind of curry that includes baby carrots, diced potatoes, peas, chickpeas, sliced cabbage, and one crown of cauliflower stewed in a creamy coconut curry sauce and topped with fried garlic, double fried red onions, and cilantro 🍴♥️ Satisfying, indeed.

When it's time to keep it clean, veggie dishes are the way to go. Fresh, hearty, and full of delicious, nutritious protein, vegetables keep us growing and living healthy longer. The entire month of August my husband and I have decided to leave out the meat and transition into only seafood and veggies, evenly though we mainly eat vegetarian meals. I challenge everyone to live healthier lives by simply not eating meat for every meal 💪🏻♥️🍴Here's to living to 100 😊
🍴Tonight's dish: Vegetarian cabbage rolls filled with chopped mushrooms, grated zucchini and yellow squash, green lentils, and quinoa topped with a homemade white wine tomato sauce and sprinkled with freshly grated parmesan and chopped parsley.

El Palote Panadería not only sells vegan tacos but also vegan tamales, menudo, vegan flautas, and even vegan Mexican desserts. Definitely a place you should try, even if you aren't vegan!
