This breakfast was easily the most productive thing I’ve done in the last couple days #sorrynotsorry
. 🍽 Zucchini noodle egg nests with turkey bacon and an almond milk latte☕️🍳🥒

First time making these zucchini eggs so still figuring it out (hit me up if you’ve got a better way to make them 🙋🏼‍♀️) but here’s what I did:
•Spiralize zucchini and squeeze out excess water into paper towel (I store extra in a bowl with a paper towel at the bottom)
•Sauté zucchini in olive oil for 3 min, season with salt, pepper, garlic powder
•Place on a baking sheet and form a hole in the center. Crack an egg in middle of each.
•Bake at 425 for 15 minutes.

Pleasantly surprised myself today with a 2.5 mile run🏃🏼‍♀️in 21.5 minutes today after killing my legs at CrossFit yesterday (🍑squat day = best day). Now I know this time is not record breaking or really even above average, but for me its an accomplishment!👌🏼I am the first person to tell you how much I hate running🙅🏼‍♀️, but I’m trying push myself out of my comfort zone and learn to like it. Also got a wild hair and decided to sign up for a 10K in March with @douglas_e.fresh , so mostly trying not to die.💀

First exam of the semester ✔️
Ground Turkey Stuffed Mushrooms in my belly ✔️

Made these as a study break last night and they turned out surprisingly tasty. Heres how 🦃➡️🍄
•Brown (~16oz) ground turkey in a pan.
•Add 1/2 chopped onion & 1 chopped red pepper and sauté until soft.
•Wash and remove mushroom stems (and chop them) then scoop out some of their insides to make more room for stuffing.
•Add mushrooms guts, stems, 2-3 cups of fresh spinach, & 2 tbsp minced garlic to turkey mixture.
•Season with salt, pepper, onion powder (sorry didn’t measure).
•Once cooked, add 3-4 Tbsp almond flour and 2 egg yolks. Stir together quickly.
•Finally stuff the mushrooms with turkey mix and bake at 400 degrees for ~25 minutes🍽

Sidenote: I ended up with way more turkey mixture than could fit in the mushrooms so I set aside some before adding the almond flour/ egg yolk. Paired great with eggs for breakfast this morning!!! 🐣🍴

I’ll be the first one to admit that I use the holidays as an excuse to pig out on junk food. I have the biggest sweet tooth ever, but disciplining myself from eating every dessert in sight throughout the year makes the holiday sweets much more of a treat! 🍪🍥🍰

As I sit on the plane home to Wyoming to spend the holidays with my family, I decided to use the time to reflect on something a little different.🎄✈️💭

When I’m in Philadelphia I end up prioritizing school and health/fitness. In reality, family and friend relationships are my highest priority. I’m lucky that I have been able to form strong relationships with people who I know will support me even when I am not always the best at communicating(I’m sure they can attest to this). 😬 Without this support system to ground me during tough times and people to rely on, I wouldn’t be able to focus on these other areas of life that require more of my attention during certain periods of time. I’m so lucky that my family and friends understand that my attention may not always be centered on them but that they are the rocks that keep me grounded.
.

I spend so much time posting/thinking/focusing on school and health/wellness that I forget to show my appreciation for the support system that truly makes this possible. They are my underlying strength and ultimate top priority, so here’s a giant THANK YOU to all of you.

Been feeling extra frustrated with my workouts lately- busy schedule📚, sick for a week🤧, had to put my crossfit account on hold until after the holidays💀💪🏼, and even when I have made it to the gym my workouts are wimpy 👎🏼. Finally accepted that what I need right now is to REST and FOCUS on finishing the semester strong. And guess what?! That rest was exactly what my body wanted. 💆🏼‍♀️🙌🏼 Finally got a great workout in today and it felt SO GOOD. Don’t take your abilities for granted, listen to your body. And when you need a rest day (or 5 in my case) TAKE IT!!

5 minutes stair master warm-up
40 minute incline elliptical (while studying fixed prosthodontics🤓)
3 sets: {30 squats, 15 plié squats, 15 narrow squats, 30 crunches, 60 second plank}
Finished with LOTS of stretching

Thoughts on December 💭
. 🎄The holiday season is nototorious for temptation. Every event is filled with sweet treats and drinks🍪🍩🍻. I’ve made it a point not to let “eating healthy” get in the way of social life. So I have to accept that December is not going to be ideal in terms of food choices and gym attendance. But I’m perfectly fine with that. I’m doing my best to make healthy choices when I’m home and not worry about every food/drink I put in my body when I’m at a holiday party or out with my friends. Being healthy isn’t just about food and working out, most IMPORTANTLY it’s about being HAPPY. And the holidays make me pretty damn happy! ❄️💕🎅🏼

Happy Friday Eve! 🥑 I was fantasizing about this lunch during my practical exam this morning. | Curry Butternut Squash Soup | Avocado Toast | Chicken Salad |

I’m actually obsessed with this soup inspired by @foodfaithfit 🥄 Roast ~5 cups cubed butternut squash at 400 degrees for 30-40 minutes until soft. In a large pot sauté 1 diced onion and 1 Tbsp minced garlic in olive oil for ~3 minutes. Add 4 cups chicken broth, 1 tsp salt, 2.5 Tbsp curry powder and squash. Simmer until squash begins to fall apart then use immersion blender (or transfer to blender in small portions) to puree. Add 1 can unsweetened coconut milk.

This makes a HUGE portion so you may want to cut the recipe in half or freeze some for later!

I’ve been sick for the last few days so I’m looking forward to getting my butt back to the gym this afternoon! 🤧🙅🏼‍♀️💪🏼

Begging for tips on taking better photos in crappy nighttime lighting💡🕯Bad lighting or not, last night’s ~Buffalo Chicken Stuffed Spaghetti Squash~ was LIT🔥🔥🔥

Spaghetti squash is one of my favorite carb substitutes. It’s lower carb than other winter squash like butternut and acorn squash and easy to prepare. I prefer to bake it whole for simplicity- poke holes with a fork and stick it on a baking sheet in the oven at 400 degrees for 50-70 minutes. Once cooked, halve and scoop out seeds and strings.

For the chicken: Cook 3 chicken breasts in crockpot on high for 4 hours with 1/2 cup @franksredhot buffalo sauce and 1/8 cup of water. Once cooked, shred and combine with 1/4 cup diced red bell pepper, 4 thinly sliced green onions, 1 rib of celery thinly sliced (not a celery fan so I omitted). Fill halved spaghetti squash with mixture and bake at 350 for 10-15 minutes. Serve with more buffalo sauce and @tessemaes creamy ranch dressing.🍴

Dark chocolate chia pudding = WOW .

Seriously though, one of the best things I’ve made in a while (well aside from pecan pie). Thanks to @stupideasypaleo for the idea!🔥
. 🥄Combine 1 can unsweetened coconut milk🥥, 2 oz dark chocolate🍫 (I used @lindt_chocolate 90% dark chocolate), 1 tbsp cocoa powder, and a pinch of salt in a small saucepan and simmer over medium heat until chocolate is melted. Remove from heat and add 1/2-3/4 cup of chia seeds (add gradually while stirring) and 2 tsp vanilla extract.

I couldn’t wait to try, so I ate some while it was still warm and👌🏼👍🏼🙌🏼. Store remainder of the pudding in fridge to allow thickening. I already know this won’t last long. 😋

Sometimes its okay to put things on the back burner. Life gets crazy and it’s important to figure out which areas you can maintain and prioritize those. I often find myself frustrated because I don’t have time to try new recipes or workout as much as I’d like, let alone post on insta. That’s how it goes though. We have to accept that life get out of hand and do our best to keep a handle on it.

Since I’ve been MIA the last couple of weeks, I wanted to share some ways I tried to stay healthy in the midst of craziness:
•Keep easy, nutritious food options accessible at all times. Some ideas: rotisserie chicken, frozen salmon filets, steamable frozen veggies, bulk roasted veggies, and pre-prepared foods from the grocery store.🍴
•Choose healthy dining out options. My favs are Chipotle, Sweetgreen, and Hummus Grill. 🥗
•Make workouts efficient (I bounced between 1 hour CrossFit workouts and study /cardio sessions on an elliptical or stair master)💪🏼
•And when all else fails, accept that not every single day will to be “perfect.” I made my fair share of unhealthy eating choices (because lets face it we all need some sugar in our lives sometimes) but didn’t allow myself to fall off the wagon completely just because life was busy.👍🏼
. •Side-note: Thursday I enjoyed allll the Thanksgiving foods. Friday I ate 4 types of pie for breakfast and Friday afternoon I took this photo after my 4 mile run.  I hate running and don’t think I’ve ever run more than a 5k at one time so I was pretty proud of this pie-fueled run.🥧🏃🏼‍♀️

There’s a muffin hidden under there somewhere, I promise.🕵🏼‍♀️

Took a study break to whip up this minute mug muffin with @wildway hot cereal. .

For this muffin in a minute (well actually minute and a half 😜) ➡️In a mug combine 1 package of @wildwayoflife hot cereal (flavor of your choice), 1 egg, 1 tbsp oil (I used vegetable), 1/4 tsp baking soda, and 1/4 tsp vanilla. Microwave for 90 seconds and ~TA DA~ a perfect snack/breakfast/dessert/etc. 😋

Topped with strawberries, blackberries, blueberries, almond butter, @wildway coconut cashew granola, and a sprinkle of unsweetened coconut flakes. This makes a pretty big serving actually so I️  split the muffin in half for later!

I’m slightly obsessed with @wildwayoflife products if you couldn’t tell. They are all grain-free, low carb, fiber-rich,  and relatively inexpensive for the quantity. Highly recommend trying their products; the grain-free granolas are my absolute fav (esp apple cinnamon and coconut cashew).
