@roguela "As a chef, You truly show your magic and craft by utilizing the most simple of ingredients and elevating them to something that completely catches your senses off guard. Chicken • broccoli • potatoes • I started with the presentation of these ingredients in the most basic geometric shapes which represent the commonness on the plate. The notoriously bland chicken breast was sous-vide, and dusted with roasted chicken skin dust. For the broccoli I used the stems, cooked them in butter until soft and covered then in their own florets. The potatoes were confit in butter and herbs, and topped with potato skin dust. My daughter and I picked pink peppercorns from a tree near our home which I used to make a foam to finish off the dish." - Sebastian Rosado, Sous Chef, @spagobh
