I know I haven't posted anything in a while now, and I hope you haven't missed me too much☺ I've had a lot going on lately, you see. I've got a new job! Just the exact job I've been looking for. I'm now back in science as an engineer at NIBIO, the Nowegian Institute of Bioeconomy Research. So I've been moving and settling into a new (tiny) appartment and the new job. I'll soon try posting a few of the dishes that I've made lately, but I am also having some problems with my phone. Probably just have to get around to doing a factory reset. Such a hassle😜

A fresh and healthy tuna salad!

Made this rather simple and light salad today. Deliciously fresh😋
.
With iceberg lettuce, canned tuna, chunks of lemon, blanched French beans, scallions and a sauce of light yogurt, miso paste and sesame oil. Garnished with sesame seeds.

I'm already looking forward to have the leftovers for lunch tomorrow😋

Vegetarian taco with a couple of unusual ingredients.

Fried kidney beans and white beans with tomato, garlic, cayenne chili, very hot sriracha sauce and paprika powder. Wrapped this with some hot salsa, onion, peanuts, maize, cheese, iceberg lettuce, sweet red pepper, avocado and chunks of orange in whole wheat tortillas.
.
The sweetness of the orange and crunchiness of the peanuts was very nice with the rest😋 Hot 'n sweet is such a good combo.
.
As always, I made way too much, so I have leftovers for three meals, and not just for lunch tomorrow. Might refresh it with some yogurt or something for dinner tomorrow.

Look at this fishy burger...

It was yummy! I served fish burgers for my grandmother and me last weekend. I really enjoyed them, and I'm pretty sure she did as well😊

Started by mixing a sauce of light yogurt, sweet soy sauce, lemon zest and fresh dill. Then pan fried the fish (saithe/ pollock/ Pollachius virens/ sei) on top of lemon slices in margarine. Building the burgers, I had whole grain hamburger bread, the sauce, crispy lettuce, cucumber, fish, fried lemon, scallions, more sauce, a few cooked shrimp and the bread top. On the side I added chuka wakame seasoned sesame seaweed salad and sliced daikon radish.

On a separate note, I got a job offer today, and I'm super excited! Just had to add that.

Spicy chicken curry, brown rice and crisp plantain!

I've been wanting to make a curry dish for a while. Not something I make often, but it turned out just as I hoped - pretty great👌

Pan fried sliced chicken, sweet pepper, fresh chili pepper and chipotle (smoked and dried hot chili pepper). In a cast iron pot, I fried onion, ginger and garlic, then added tomato purée, chopped tomato, light coconut milk, fresh coriander and spice powders (cumin, smoked paprika, coriander seed, piri piri chili, turmeric and salt). Let it simmer a while, then added the chicken. Fried some thin slices of plantain till crisp and boiled some brown rice. Garnished with fresh coriander.

As usual, I made quite a lot more than enough for one portion. More like four. And tomorrow I'm having dinner at my grandmother's, so I think I'll freeze the leftovers for monday or tuesday.

A simple but tasty rice salad.

After shoveling snow off a roof for four and a half hour at work, I was spent😴 I wonder how many calories I burned...😫 So after a shower and a two hour nap, I wanted to make something simple but healthy for dinner.
.
Chopped some lettuce and mixed with boiled and cooled brown rice and quinoa, crabsticks (surimi), soy sauce, wasabi paste, sesame oil and rice vinegar.
.
Thinking I'll make some sort of chicken curry with coconut milk and lots of spices tomorrow or saturday. Though come to think of it, I'm not sure I have any more chicken in the freezer. Maybe I'll improvise with something else.
.
Now I'll call it a night and listen to The Strange Case of Dr. Jekyll & Mr. Hyde on Audible with the sleep timer on for half an hour.

A fresh and healthy salad!

I made this big and healthy salad today. Turned out so fresh and tasty, and vegan as well. Considered adding some mild cheese, but I think this one was better without.
.
Chopped cabbage, iceberg lettuce and baby spinach. Added big white beans, boiled and cooled barley, pomegranate and squeezed half a grapefruit. Finally added some hazelnuts and mixed. Added a few grapefruit wedges as garnish.
.
I made enough for four meals (2x dinner, 2x lunch), and I'm thinking the grapefruit juice will keep it fresh a couple of days. And of course I'll keep it refrigerated and sealed in air tight boxes.

Venison in cabbage, or "rådyrikål"!

I made this unusal twist to a very traditional dish yesterday, and it turned out absolutely delicious😋 Based on a dish often referred to as Norway's national dish, "fårikål" (mutton in cabbage).
.
So with a little margarine in a cast iron pot, I layered venison chunks, cabbage, green apple wedges, fresh rosemary, whole black pepper, juniper berries, salt and a little wheat flour. Added a little water and simmered for approximately three hours. To go with this, I boiled a few potatoes and toasted some hazelnuts with rapeseed oil and a venison spice mix. Finally added some lingonberry jam.

The difference from the national dish is that it has mutton instead of venison, and does not have apple, rosemary, juniper berries or nuts (flour is optional). Oh, and I added the margarine because this venison was a lot leaner than the mutton usually used. It was very similar, but at the same time quite different. Delicious none the less😋

Shakshuka turned out great👌

Quite spicy and oh so packed with flavour! Also one of the nicest looking dishes I've made in a while. A healthy vegetarian dinner.

Venison meatballs with cranberries, green apple, parsley, egg, venison spice mix (garlic, shallots, juniper berries, rosemary, bay leaves) and potato flour. Boiled and pan fried tiny potatoes with salt and pepper. Gravy made of venison and veal stock, goat milk, goat cheese, red wine and thickened with corn flour. Salad with fresh iceberg lettuce, oxalis (some cultivar of wood sorrel☘), pumpkin seeds, sautéed chickory lettuce and a drizzle of honey. Served with cloudberries😋

Potato dumplings like this have at least 11 Norwegian names including "raspeball". I know they're used in all of Scandinavia, and known as "kartoffelknödel or -kloße" in Germany.

I mixed mashed boiled and raw potato with wholewheat flour, juniperberries, parsley and venison spice mix. Formed balls, added lightly seared venison chunks as cores and simmered in venison stock for 35 minutes. Also made a kohlrabi mash with onion, light yogurt, mustard and a pinch of salt. Plus a mixed wild mushroom stew with salt, pepper, goat milk, goat cheese (chevre) and Castello Blue cheese. Used potato starch for thickening. Served with cloudberries.

It tasted great, and I'm pretty pleased with my first try at making "raspeball".

Squiggly squiddy spaghetti salad!

Had a couple of squid tubes in the freezer that I wanted to use. For once I managed not to overcook them, so it turned out great, and almost not rubbery at all🙃
.
Sliced and pan fried squid and dried seaweed. Mixed it with some boiled spaghetti and my mother's homemade salsa (which I spiced up a little with hot sriracha chilli sauce). Let it cool down a little, and served with fresh iceberg lettuce, light yogurt and and some feta-like cheese.
.
And I've got plenty of yummy leftovers for tomorrow.

There is actually a chance that I might move to this breathtakingly beautiful place. I was at a job interview nearby, and I feel it went fairly well. So now I just have to wait for the decision.

The hotel was really nice. Being there off season and from a monday to tuesday, I was the only guest that night!

This morning's big fishy breakfast!

Three slices of whole grain @polarbrod with low fat margarine. 
1: arugula and smoked and peppered mackerel.
2: iceberg lettuce, light yogurt and smoked salmon with caraway seeds, fennel seeds, coriander, aniseed and more.
3: red beetroot salad and pickled herring with onion.
.
Also had a soft boiled egg with a pinch of salt and a drop of truffle oil. And of course a glass of milk and a cup of coffee!

Miso breaded deer and ajvar sauteed vegetables!

I did this highly successful culinary experiment the other day. It turned out absolutely mouthwateringly (sic) delicious! With tastes from Japan, Turkey, Norway and more. Yumm!

Sauteed chickory lettuce, champignons, onion, tomato and cabbage in rapeseed oil. Mixed in Turkish ajvar (mashed baked capsicum and aubergine++).
.
Smeared Japanese miso paste (fermented soybeans) all over roe deer steaks, covered them in wholemeal flour and then pressed them in sesame seeds. Pan fried in rapeseed oil.
.
Garnished with some arugula and voilà; dinner served!

Hunting in snowy Norway!

Just back from a hunting trip with my father and our dog Bonnie, a Beagle. We didn't get anything today. I saw a nice roe deer, but it was slightly too far away. I need to be very sure of a good shot before I pull the trigger. Had a nice day anyway, and brought some delicious dates and caramel cookies! The dates looked kinda out of place out there in the snow😛

This venison salad! Perfect weekend dinner.

Today I recreated one of my favourite dishes - the venison salad I posted 7 months ago. So delicious it almost hurt.
.
A big chunk of a roe deer thigh, quickly pan fried in butter with venison spice mix (see photo for contents). Sliced to bits and mixed with iceberg lettuce, leek, dried cranberries, salted and toasted pumpkin seeds, chevre cheese, a drizzle of flax seed oil and some great honey I bought off a viking at the reenactment market thing this summer. So gooood!

Made enough for three, though I am only one, so I'll have leftovers for lunch and dinner tomorrow!

Pan fried chicken thighs with onion, garlic, chipotle, salt, pepper, coriander, cumin and rapeseed oil. Then mixed it with crushed tomato, lentils and white beans. Also added some chicken stock, sundried tomato and fresh thyme. Simmered for about an hour. Added a splash of yogurt and simmered for another 10 minutes.

It turned out very well, very savoury and a little spicy.
