Vegan Lor Mee / Braised Noodle
(Recipe link on bio) ‘Lor Mee’ literally means braised noodles. Typically, the thick yellow noodles are served in a bowl with thick flavorful broth/gravy topped with herbs, sauces & some non-vegan ingredients. ‘Lor Mee’ is available in Malaysia & Singapore but there are slight variations to this dish depending on where you get it from.
I mention non-vegan ingredients earlier as the original recipe relies heavily on pork and shrimp to flavor the broth. Additionally, pork, egg and/or fresh seafood is served alongside the noodles.
For the version I made however, has no meat or seafood. I relied mostly on kombu & mushrooms for the umami flavor. Also, the additional step of roasting the onions & carrots beforehand, adds depth to the broth.
