How to eat more vegetables #4 .
Now that I’m back in the land of the eating, it’s time for the salad post. I had some great photos that I accidentally deleted 🤦🏻♀️ and some other salads that I forgot to take photos of (Did it even really exist if I didn’t take a photo of it? 🤷🏻♀️) So anyway onto today... I love a good salad and think anyone can make a salad but if you want to break out of your lettuce/tomato/cucumber combo 🥗then hopefully this will help. I have a long way to go on my salad game before I reach the legendary salad status of my Dad or my main man Mr @ottolenghi
When I think about salads I think about a few things; Looks - obviously , taste and texture. I’ll explain shortly.
Today’s salad theme was just green, loaded up on lots of veg after being sick 🤢 However this salad is the most adaptable thing ever. If you don’t have something substitute whatever you have. Here we go...
Start with leaves, I’ve used spinach but use whatever you’ve got, roquette, lettuce whatever. Then your veg, I’ve used broccoli and beans but once use whatever you’ve got. Leftover roast potatoes, pumpkin, sweet potato 🥒🥔🥦🥕🥑 Because the broccoli and beans are cooked, I’ve added capsicum to provide a bit of crunch and texture. So, what are we up to? 4 Veg now 🏻 That’s your base, think about texture, you want a mix of hard and soft, crunchy etc. now that your base is sorted, here’s where you add the extras, I’ve added Goats cheese and walnuts (good fats!). If I had pomegranate seeds, that would have been delish 🏻and would have added nice colour too. You can add in halloumi, any nuts or seeds, canned bean mix, crunchy old bread, chickpeas for protein, there is honestly no way to get this wrong!! Chuck a few things together and see what happens. My advice would be is don’t add everything, you want a nice mix of texture and taste on your fork Of course a good dressing makes everything better. It seems I have a lot to say about salad, well, I do think you can and should be friends with salad so I’ll post the dressing separately but go on, go make a salad and try something new with it... - 5 minutes ago
