Tuesday’s Esalen wisdom: “WHAT YOU PRACTICE GROWS” 🏼 it is the truth @drshaunashapiro shared this with us the first day of the Loving Awareness workshop. It made me think of SO many things. In relation to food, I couldn’t help but think of when I first eliminated processed sugars and gluten from my diet. Nothing tasted sweet or as good as I remembered it to... Over time, I began to notice my taste buds changing peaches, nectarines, watermelon, tomatoes, they all started tasting sweeter on their own. The longer I continued to eat this way, the more I enjoyed food on it’s own AND less sugary things! .
I have always been a sauce kind of girl — ranch, ketchup, aioli, mustard, etc. 🥫 as I started paying attention to the foods I ate, I began to appreciate my mom’s homemade sauces more and more. The amount of additives (especially sugar) used in sauces is cRaZY! .
#MyFoodPractice started out as a necessity. My autoimmune disorder left me at rock bottom. I was sick as I had ever been. Simply by changing my diet, I was able to heal my gut and restore my immune system. I practiced making conscious choices every time I ate and everything in my life changed 🌞 .

Roasted Tomato and Pepper Sauce:
<< INGREDIENTS >>
1/2 of each: red, yellow or purple bell peppers, seeded and medium rough chopped
2-3 lbs. heirloom tomatoes (1 box of cherry tomatoes plus a couple large heirlooms)
1 medium red or sweet onion medium rough chopped
3-4 cloves garlic, rough chopped or 1 shallot
1 bunch basil leaves, stems removed
1/2 cup olive oil (1/4 cup for roasting veggies & 1/4 for the sauce)
1 1/2 tsp. Celtic sea salt
<< METHOD >>
-Pre-Heat oven to 350°-400°
– Parchment lined baking sheet
– Rough chop all the peppers, whole tomatoes, red onion and half the cherry tomatoes.
– In a bowl add the tomatoes, peppers, red onion, chopped garlic, olive oil and sea salt.
– Roast the vegetables for 30 minutes until just tender and browned.
