SPICED CAULIFLOWER - Yum! Such a versatile vegetable to make a white sauce, mash, steam or in this case roasted! I chop a head of cauliflower into small pieces and roast, then keep in the fridge to add to my salads for the week 😋Recipe below 👇🏻. Why is cauliflower good for you? Ingredients: 
2 cups cauliflower florets, chopped small 
1 tablespoon coconut oil
1/2 tsp ground turmeric 
1/2 tsp cumin
1/2 tsp paprika 
1/2 tsp ground coriander

Salt & pepper .
Method:

Pre-heat oven to 180 degrees Celsius. .
Place all ingredients into a bowl and toss until combined.

Avocado quinoa salad with spiced chickpeas 🙌 Today’s lunch was an adapted recipe from @yummly and I must say it was quite delish!! ✨ I basically used a mixture of veges I had in the fridge — tomato, green beans, carrot and avocado — and combined it with white organic quinoa and roasted chickpeas 😋 the dressing was made up of one shallot, some olive oil, apple cider vinegar and whole grain mustard 💛🌟😍

Happy Monday!  I hope y’all are staying cool as the summer is really bringing the heat.  I wanted to chat for a sec about MATCHA! It’s one of my favorite things in the entire world, seriously.  I love going to places where it’s prepared artfully and traditionally, but I also dig using it in my everyday routine at home via smoothies, coconut lattes, and desserts.  I know caffeine may incite an inflammatory response in certain people’s systems - so it’s not for everyone.  Matcha contains incredible antioxidant properties as well as a dose of cell rejuvenating chlorophyll.  For my at home late I put coconut cream, agave, and collagen powder in my electric milk frother (excellent investment!) and when that is nice and creamy and frothy and warm I pour it over matcha powder that I’ve already whisked with a bit of warm water.  In a smoothie I stick with coconut and frozen banana and collagen as a base.  Add matcha powder (it only takes a teensy bit of PURE CEREMONIAL GRADE) and blend until smooth.  I’ll have a delicious popsicle recipe coming your way soon, too! 🍵 My personal favorite brand is Sun Potion because they thoughtfully source their product.  Theirs is not certified organic, but I think the farming practice used for their tea is better than organic, read for yourself! (Not a sponsored post, but link in bio is to Sun Potion)

What does health look like to you?  Is a a slew of doctors and specialists?  Is it a medicine cabinet full of Over the Counter meds and scrips?  Is it the ability to heal?  Maybe it’s noticing that you are only sick during one or two times in the year?  Health, to me, is realizing that I have only been sick 1 time in 18 months.  That my kids have only had 2 sick days from school in almost 2 years.  It’s also that I haven’t been to the ER or Urgent care in almost 4 years.  That I know what to do at home when something happens in the middle of the night and I don’t have to dramatically search google and run to the local CVS for four boxes of chemicals and toxins to do a “shot gun” method on my kids and pray something will work.  Health is the constant reminder that I can wake up and feel good, energized, and the ability to play, run and swim without pain.  Health is so much more than just not having a cough.  Health is having a choice and knowing your options.  Health is feeling good and knowing tomorrow will be even better. The best part is... we can always begin again.  We can begin again right now, and choose a different path.  You don’t have to be an aromatherapist to know how to use essential oils.  All it takes is the willingness to learn a new way that has worked for millions, and has been around since the beginning of time. #choosehealth #begoodtoyourself #YOLO #YLEO

More often than not it’s hard to find motivation to cook dinner when you have a husband who’s gone a lot of nights and children who have been trained (sadly by me) to eat the all American diet purely out of convenience.  I mean, even organic mac & cheese and chicken nuggets (which is a step in the right direction) is still just mac & cheese and chicken nuggets which has little to no nutritional value. Introducing new/healthier foods that they don’t instantly gag or roll their eyes at me with the “what food now” look is definitely challenging but I know, or at least I’m hoping with all my might, that it will pay off at some point in the future.... And then tonight on the way home Daniel says, “I want a big bowl of broccoli for dinner!” I was so excited to hear those words I could’ve screamed!!! I don’t know (nor do I care) if he was delusional from the cold he’s had, trying to make me happy because it’s been one of those days or if he really wanted broccoli but either way it was a moment of satisfaction knowing somewhere in all those failed attempts and wasted food that I’m making progress!! My mom once told me, reward the behavior you want (which on a side note works really well for every relationship/friendship in your life), I’m guessing based on how much I rewarded his statement with positive loving attention, I’m pretty sure he’ll be asking for broccoli morning, noon and night now!!! Healthy breakfasts and lunches are a regular around here but I’m making a big effort to cook more at night.  Setting a goal of 3 times a week may seem like a piece of cake to some of you but for this mama, who doesn’t love being in the kitchen, it’s a big commitment! So here’s to night one this week which was teriyaki chicken, brown rice and broccoli for them and sautéed chicken, riced cauliflower, broccoli and a miso sauce on top for me.

 1. No gluten! 2. No soy! 3.Very limited dairy ei: Greek yogurt, goat cheese (like 4 times a year) same w/butter. 🦋
Basically, I follow the FODMAP diet. Look it up. Might be helpful for those who suffer from inflammation/bloat, poop issues- both ways, loose and blocking. Today’s almost burnt, mis-mash, turned out pretty tasty. Baked up some chicken thoughts (coated in coconut shred, lemon juice, liMe EO, honey, and some random quinoa flake things I feed deep in the cupboard) with left over roasted potatoes, cold rice (conveniently is food for feeding your belly bugs), sauerkraut juice, and some pickles - I’m in to pickles lately!

Fastest dinner in the books. So easy to make when your running late on dinner! 🌶 I coated the peppers in avocado oil and charred them right on the stove top (open flame)! Shredded some rotisserie chicken, cut some lettuce, and viola 💃 Dinner is served! Happy Monday night everyone!

I’ve posted about these before but y’all they just saved my life..or I sure feel like they did! 
Little back story (in case you don’t know, I have colitis, a digestive disorder that comes with flare ups every so often!) Tonight I ate dinner with my parents, and with dinner I had some bacon wrapped stuffed jalapeños. I’m guessing this is what caused the flare up, since most of them were really spicy. I came home and literally felt like I was going to die. The pain was almost unbearable. I grabbed these and took one, not really expecting it to work fast (it’s been a while since I’ve taken them 🤦🏼‍♀️), but I was WRONG!! I would say about 5-7 minutes went by and I feel normal again!! I will NEVER stop taking these again!! #guthealth

when I lived in Korea - one of my favourite throw-together meals was exactly this: sliced pork belly, kimchi, capsicum, onion and garlic - with nothing but a bit of salt and pepper & stir-fried... so simple, fast and tasty... my five year olds as for seconds 🙌🏼

I'm so impressed with how my mindset is changing this 3 day detox process for me. In the past, I've struggled to keep my hand out of the cookie jar (I don't really have a cookie jar) and had to be my biggest cheerleader to get through. When day 3 was done, I immediately began to think of how great it was that I could go back to eating normally. 🙄🙄🙄 No, 3 days isn't a long time to commit to a different way of eating but, when you've battled an unhealthy food addiction for as long as you can remember, 3 days seems like foreverrrrrr! .

This summer feels like a time of awakening. Personal shifts are happening and it's making me feel pretty damn good. 🙏🏽 Sometimes we need a little time to play and just be "lost" in the moments to help us see and feel where our energy needs to shift. Sometimes I feel overwhelmed with all the selfcare modalities out there and I feel so eager to do and try everything that I end up doing nothing. 😏 Other times it feels as though I am in a total groove of selfcare bliss that I don't even realize the flow until I somehow get completely out of it. This is normal and acceptable...like the tides we ebb and flow with our energy, our motivation, our intentions. I think it's important to self accept wherever you may be and trust that your heart will bring you back to your truth. Try to listen to the subtlety of your callings and make moves accordingly. Try spring cleaning your planner in the middle of summer and setting new intentions not just in January but today. Let this summer energy ignite your drive. It's all for you baby!

I love making fun bowl like this, it makes me happy Eating the rainbow is good because you get different nutrients. Deep red, purple, blue foods: high in an antioxidant called anthocyanin. Supports increased longevity, cardiovascular health, cancer prevention and improved memory and cognition in those with mild to moderate dementia. 🧡 Orange foods are good for your skin (C rebuilds collagen), eyes, heart, immune system and they may decrease the risk of cancer. I will be 35 in 34 days, and my goal was to post 35 posts in 35 days! I did two videos yesterday, so yay me!!! Being a mother to 4 children, one with autism, and one still potty-training, life can get a little hectic sometimes. But, I am learning that I need to take care of me first sometimes. To all of you beautiful mothers out there, life can get hard sometimes, but remember to care for yourself, take good care of yourself, for the sake of your family. Take time to replenish who you are. Don't let your take go on "E." I found myself doing that too often. But, take time each day to keep your tank full, so that you can give - give the best part of you to your family and the world! Here is a recipe to help you get your morning glow on, and start your day off right!

2 eggs + sautéed spinach, mushrooms, zucchini, and tomato + feta cheese. I seasoned my eggs with some paprika and placed the omelette on a bed of spinach and topped it with some red pepper flakes! So good 😊
