JERUSALEM ARTICHOKE WITH SWEET POTATO & LENTILS

Jerusalem artichokes originate from a plant that looks like a sunflower and have the nickname ‘fartichokes’ due to the impact of the prebiotic fibers on the digestive system! 😁

Perhaps one of the most fascinating benefits of fiber is due to a short chain fatty acid called butyrate. Short chain fatty acids are produced via fermentation in the colon by the bacteria that live there when they’re given access to fiber (which we can’t digest ourselves). Butyrate is one of the most powerful. This compound plays a role in reducing the risk for colon cancer (the second leading cause of cancer death in the U.S.) and Crohn’s Disease through fueling the colonocytes that line the walls of our large intestine, thus strengthening the layer that protects us agains inflammation. Butyrate also acts as a signal to our immune system, telling it to differentiate between the good and bad bacteria to reduce inflammatory events and general inflammation.

Batch testing of popular almond milks, various breads including organic, gluten free, white, &  whole wheat breads & vegetarian burgers all had disturbing levels of glyphosate herbicide. Individual brand tests of Skippy’s ‘100% Natural’ peanut butter and Lipton’s ‘100% Natural’ Green tea were also high in glyphosate herbicides & its breakdown AMPA.

Levels of glyphosate found in batch testing were from 0.87 ppb of glyphosate and AMPA (effective glyphosate) in conventional almond milks, up to 140.98 ppb in conventional whole wheat breads, 52.20 pb in conventional veggie burgers. Low levels were also found in gluten free & organic samples. Individual testing revealed 11.71 ppb in “100% Skippy’s Natural Peanut Butter”, and 208.29 ppb in “100% Natural” Lipton Green Tea.

Between .1 parts per billion &  1 parts per trillion have been shown to cause neurotoxicity, liver disease & endocrine disruption harm, which could lead to miscarriage, birth defects, infertility, sterility & increase Non-Hodgkin’s Lymphoma cancer rates by 50%. 100 parts per billion (0.1 ppm) has shown to destroy gut bacteria, which is the stronghold of our immune system, &  promote pathogenic gut bacteria, which can lead to inflammation, behavioural & learning disorders. Glyphosate can bioaccumulate, so any amount consumed is harmful.

These findings in “100% Natural” foods widely considered healthy are particularly disturbing because health conscious people are spending far more money to be “healthy” are yet eating proven harmful herbicides.

Any amount of glyphosate does not wash, dry, or cook off, instead it absorbs into the crop.  Since glyphosate is being found to be present in natural tea and these other foods, it is likely that other toxins, such as arsenic and heavy metals, are also present, as a recent study by Seralini and team showed these known poisons to be found in all of the glyphosate herbicides tested.

Dr. Keith Ooi has received a $1 million Cystic Fibrosis Foundation grant to study whether probiotics can improve the health & life expectancy of children with CF. 
Dr. Ooi, a  pediatric gastroenterologist, will look at whether daily probiotics can improve gut bacteria & digestion of children 6 years & under who have CF. Continuous use of antibiotics for lung infections can disrupt CF patients’ digestion.
Ooi will also examine probiotics’ effect on patients’ lung function.
One of the major issues children with CF face is gut inflammation that leads to an inability to grow &  put on weight. Previous  work has shown that digestive problems in CF start in  early childhood, & their degree of severity are linked with growth outcomes.
The gut microbiome works differently in children with CF than in other children. Problems arising from the difference tend to increase as children grow. This means that the first few yrs of these children’s lives are the ideal time to modify their microbiome.
Ooi will recruit about 130 children, to see if a year’s worth of probiotics can restore the proper gut microbiome m
&  reduce gut  inflammation.
The team will use a combination of about 15 strains of probiotics.
“In healthy children, the first few years of life is when the gut bacterial community evolves,” Ooi said. “Beyond 4 years old, the gut microbiome — an ecosystem of bacteria, yeasts and fungi — is set for life. Previous studies in CF have shown probiotics can reduce inflammation & help with weight gain. 
Because of this chronic, low-grade gut inflammation that starts early in life, CF patients are at a higher risk of developing bowel cancer than the general population.
“In last few years, we’ve had a revolution in treating CF, with the development of medicines which treat the underlying genetic defect. We have data to show that by correcting the underlying defect in CF using such a medication, the microbiome and severity of inflammation in the gut also improves.
Our hope is that we can modify the natural course of CF disease using a safe and easily accessible intervention such as probiotics,” Ooi concluded.

An easy channa masala over organic brown rice. I soaked these chick peas for 24hrs, then left them on the wood stove for another 24hrs, rinsing & repeating many times over the 2 days. A traditional way to prepare beans, legumes, and wholegrain to remove phytic acid and making them more nutritious & digestible. It took a little effort but now I have a stockpile of ready chickpeas in the freezer ready to throw in any meal😄 they were also made with free energy, using the stove we use to heat the cabin instead of turning on the stove in the kitchen. No cans, no plastic bags ( I use reusable cloth bags and buy bulk)and now, no extra energy used... next to try the rice on the wood stove,  I know it will take longer then the 30mins it takes on the stove but I'm keen to find out!

REBRAND

Those who know me, know I live and breathe digestive health.... I have to, I’ve had my fair share of gut issues over the years, beginning with food intolerances as a child. 
Completing my Masters at the Royal Prince Alfred Hospital Allergy Unit, helped develop my interest, and since, I’ve been working on honing my craft in the gut health and food intolerance space, including assisting with ‘The Gut Revolution’ series on ABC Catalyst most recently.

Most of the patients who find me through my website or word of mouth do so for gut health advice. 
So I’ve decided that it is time to specialize in this area as I believe good gut health is fundamental to good general health. 
My new brand, ‘The Gut Health Dietitian’ isn’t fancy but says what it is. 
You may have noticed that my posts are starting to reflect the change. They’ll be focused on pre and probiotics, fibre of all kinds, all things anti-inflammatory, low FODMAPs, and low food chemical. Not to mention all the amazing foods that support glowing gut health.

Breakfast for lunch is my fave. Just look at those beautiful bright 🦆 eggs!😍 Making omelettes takes me back to my SU days working in the dining hall. On the weekends I made them for the 🏈 team! I added in some fresh goats cheese & basil with a side of beets & gluten free naan. YUM!!!

Gut Healthy Jerusalem Artichoke Soup

On day 3 of our Gut Health Series, I'm featuring a comforting and healing soup recipe from Eat Your Way to a Healthy Gut, the latest cookbook from nutritionist Dale Pinnock, also known as The Medicinal Chef. Pinnock believes that making long-term changes to the way you eat is a much more sustainable way of achieving good health than following hard-to-follow diets. In Eat Your Way to a Healthy Gut, he explains the anatomy and physiology behind common digestive complaints, such as bloating, constipation, food intolerances, IBS, and inflammatory bowels diseases, to show how the body digests different foods and gives readers the tools needed to heal and promote good gut bacteria. The 50 easy recipes are divided into chapters based on the particular gut issue they are meant to address. It also includes an informative guide to which foods to eat and which to avoid to alleviate symptoms.

The following recipe for Jerusalem Artichoke Soup (also known as sunchokes) is one of my favorites. It's easy to make (just six ingredients), is so satisfying, and will feed the good bacteria in your gut! It makes a small batch (just 1 to 2 servings), so I say double or triple the recipe and freeze some for later.

Prebiotic foods are like fuel for good bacteria. They have certain fibrous carbohydrates that nourish the good bacteria to help it to grow. This process helps build a healthy microbiome, which is our defense system against toxins we encounter from animal products, the environment, poor quality tap-water, and common yeast and viruses or other types of fungi.
Nature gave us quite the gift when it comes to prebiotic foods because there are many that have just the right “ingredients” to improve gut function without us having to do anything else but eat them! You can pair them with other probiotic foods for an even better result, or just include several of them throughout the day separately from your probiotic-rich foods. If you don’t currently eat probiotic-rich foods or don’t like them, then consider choosing a supplement like Triplex  as another option. DM me for info . 
Asparagus is packed with fiber, folate and other B vitamins, and even have 4 grams of protein per 8 stalks. It has a naturally sweet taste and is also a natural diuretic to beat bloating.

That moment when...
A longtime friend calls you to say she just got diagnosed with Irritable Bowel Syndrome after a misdiagnosis + surgery... and was ALSO told to just “eat more fiber” by a gastroenterologist as I was TEN. FUCKING. YEARS. AGO. 
#IBS is currently effecting 10-15% of our population. Most people are silent, because though there is a poop emoji 💩, it’s still a taboo topic. Men and women are sitting at home rather than out giving their unique gifts to the world. They’re suffering, because of a condition that isn’t taken seriously. 
What’s more is that the Mind-Gut Connection is SO REAL. Way more real than I can convey in a FB post. It’s NO COINCIDENCE that personal growth was and continues to be one part of my healing, treatment, and management of this thing. Because we Warriors learn that suffering is a choice, IBS is a blessing in more ways than one, and it doesn’t rule our life. 
If you have someone who’s been vulnerable enough to tell you they have this, please be the person who connects them with the IBS Warrior Community. They’re NOT in this alone. There IS a solution. We WILL rise + reclaim our wellbeing. #Together
