Grain-free granola is a staple in my pantry. Not only is it great as a bowl of cereal with some nut milk, but it also adds that extra crunch to your smoothies and chia puddings.
Sure, you can buy a packet from the supermarket or you can find 5 minutes in your day to make a batch of your own!
500g mixed raw nuts
1 cup quinoa
2/3 cup shredded coconut
2 tablespoon Rice Malt Syrup / Honey / Maple Syrup
2 tablespoons coconut oil
3 teaspoons vanilla extract
2 teaspoons cinnamon
sprinkle pink salt chop nuts by hand or preferably pulse in a food processor a few times to get varying consistencies from fine crumbs/nut meal and a few chunky bits. 🍐combine nut meal and all dry ingredients in a baking tray. drizzle over some rice malt, maple syrup or raw honey, vanilla and the coconut oil. 🍋Use your fingers to rub everything together to form something like a crumble with bits sticking together in clusters. bake at 160C until golden and crunchy, taking care not to burn. check frequently and toss a few times while cooking. serve with almond milk or coconut yogurt and fresh berries - 3 hours ago
