Chicken dak Bunglow!! Has its roots from the British era.. With time and commercialization there has been many modifications in the recipe. These days every restaurant will have this in their menu and everywhere it's a different taste, like now they don't add curry patta at few places bcz it doesn't goes well with the taste buds for some..Some garnish with fried onions.. However few things which are particular to this recipe, is less use of spices, boiled eggs and more use of coriander powder. This recipe is from one of the grand daughter of one such khansama.
1 kg chicken
1 onion + 1 inch ginger +8 pods garlic +2 green chilly (all made into paste)
5 tablespoon beaten thick curd
1 teaspoon red chilly powder
1 teaspoon salt (or as per taste)
1/2 teaspoon turmeric
1/2 teaspoon garam Masala (freshly grounded for best aroma)
2 teaspoon coriander powder
2 tablespoon mustard oil
You can also add lemon juice to it. I skipped
2 bay leaf
3 green cardamom
1 cinnamon stick
1 pinch methi seeds
1 sprig curry patta
2-3 dry red chilly
2 onions finely chopped
2 tomatoes pureed
1 pinch turmeric
1 teaspoon sugar
1 teaspoon black pepper
2 whole green chilly
1 tablespoon ghee
3 tablespoon mustard oil for cooking
2 boiled eggs fried
2 potatoes diced and fried
Marinate the chicken with all the ingredients mentioned under marination for at least 3-4 hours, overnight is best.
Heat oil and add tempering, once spice crackle add chopped onions and sugar
When onions turn golden brown add tomato puree, you can use chopped tomatoes as well.
At this point also add a pinch of turmeric, whole green chilly and black pepper powder.
Fry everything till oil separates
Now add marinated chicken and fry on high flame for 5 minutes and then lower the flame and cover.
Keep stirring in between and cook till chicken is done , add fried potatoes (if your potatoes are very hard you may add them earlier)
Add water as per your required consistency but don't add too much, let the gravy be thick.
Add one tablespoon ghee before switching off
Serve with fried boiled eggs, fried onions and chopped coriander leaves . - 19 hours ago
