Coconut Porridge! 🥥🤩 Super nutritious and filling...great alternative to breakfast cereal! 😋 I believe I found the base of this recipe on Thrive Market blog, but I changed it up to make it my own, and it goes like this...
🌀1 tbs chia seeds
🌀1 tbs flax (I like golden flax because it’s more nutritious)
🌀2 tbs hemp seed
🌀4 tbs coconut flakes 🌀1 tbs cacao nibs
🌀1/2 tsp maca powder
🌀Cinnamon
🌀Honey
🌀Almond milk
Add all ingredients to one bowl in the order listed, then whisk until blended. For the cinnamon, honey and almond milk, just use however much you like. Keep in mind the chia and flax will soak up a good bit of the milk. For the cacao nibs and maca powder, I love @terrasoul ...really great company (I order them from amazon).😊 All in all, you’re getting a very filling, protein rich, cleansing, antioxidant, healthy fats, anti-inflammatory meal that will give you energy and keep you going until lunch!

LEMON-BLUEBERRY MUFFINS 🍋

If you love blueberry muffins, then you will love these for sure! The combination of coconut, blueberries and lemon is absolutely perfect!

You can use regular cow’s milk or another plant-based milk for this recipe. You can also use another oil such as coconut or avocado oil. If you wish to replace the dates with sugar, then you can use about a half cup. I like to use two different flours for this recipe, one being coconut flour and the other being oat flour.

2 cups flour (I use Bob’s Red Mill - coconut flour)
2 tsp baking powder
1 cup milk
1 tsp apple cider vinegar
1 tsp vanilla extract
8 dates (I use Sunsweet - pitted)
1/4 cup olive oil
1 lemon
1/2 cup blueberries
1/4 cup shredded coconut (I use Bob’s Red Mill - unsweetened)

This is the first time in a looooong time that my omelet attempt hasn’t turned into a scramble and I’m really happy about it —> 2 egg whites and 1 whole egg + red peppers + green peppers + onions + feta cheese + avaocado + light 100 cal english muffin on the side 🥑🍳

Today’s lunch 💚 homemade pancake cut into pieces (see recipe below), cucumber, cantaloupe, cherries & @enjoylifefoods mini chocolate chips. All packed in the @yumboxlunch box ✅. Snacks are @eatspokes + apple slices packed in the @bumkinsbaby reusable snack bags. 
Recipe for the pancakes (you can make these the night before to save time).
2 eggs, 1/4 cup rolled oats, 1/2 tbsp chia seeds, 1/2 tbsp hemp seeds. Mix it all together. Heat small pan with a bit of coconut oil and place the entire mixture into the pan. Flip, cook the other side, then cut into smaller pieces. Drizzle with pure maple syrup! ———

🌱 Contiene muuucha vitamina C y A, que nos ayudan a prevenir enfermedades cardiovasculares, cáncer, alzheimer y aumenta la producción de globulos rojos.
🌱 Posee una enzima digestiva, que es responsble de los efectos anti inflamatorios, sobretodo en el estómago. Reduce los dolores de artritis y cólicos menstruales. 🌱 Es utilizada de modo terapéutico, por medio de sus enzimas digestivas que pueden descomponer mejor las proteinas, previene el estreñimiento por su alto contenido de fibra y trata el síndrome de colon irritable.
🌱 En la antiguedad curaban problemas de la piel y parasitosis con sus semillas. •
Luego que descubrimos todas las maravillas que nos aporta a nuestra salud, pues no hay duda que debemos incluirla en nuestra alimentación 😊 y no hay mejor forma que comértela que así de hermosa y como primer alimento del día. 🌤

Pueden colocar sus toppings favoritos, yo le puse unos blueberries, frutillas, avena en hojuelas, mantequilla de almendras y hojitas de menta fresca. •

One treat I’ll never get over is ice cream. However, with my specific autoimmune diseases, I won’t be able to have dairy again. At first, I literally sobbed in the surgery center parking lot after finding out but now looking back, I laugh. I don’t miss dairy at all when there are a million and one substitutes. There is nothing to miss! This mint chocolate chip “ice cream” shake got me fudged up (pun intended)! I am all about fueling my body with clean ingredients and enjoying a good, nutrient dense, and healthy veggie filled treat. Swipe ➡️ to see all squeaky clean goodness I am talking about! I am starting to get excited about going on vacation on Friday! We all definitely need a break as a family to rest together and to have some fun in  the mountains. I love that our kids are getting old enough to where they can really enjoy things like bike rides (or at least being towed in the bike trailer 😉), going fishing, playing in the river, and getting ice cream together. 🍦

Family is such a blessing, even through all the craziness! It's important to take time together and just enjoy one another. Don't forget to affirm your kids (and husband!) on a daily basis. ❤

attempted to make a greens smoothie bowl this morning but I clearly went wrong somewhere because it ended up more black-ish. I even followed a recipe someone posted and everything, so not sure where I messed up😬But guess it's a win-win situation in the end because I'm already eating some greens for breakfast, but I can't even taste it

Vegan restaurants are my favorite restaurants♥️🌿and they never disappoint🤤this was a hot beet sandwich made with roasted beet seitan, toasted bolillo, and grilled locally grown asparagus served with whipped potatoes topped with mushroom gravy😍this dish was so dang good but then again everything from @modernloveomaha is so dang good💁🏼‍♀️definitely have been craving it lately so I might have to go again🙈happy hump day babes🐪💕get out there and carpe those diems💫

And yet another chia pudding post! Starting the day off right because in the last 10 days I’ve eaten out way more than usual, and unhealthy at that (think fries, burgers, tacos, etc). Today’s breakfast is simple but I especially love the banana chips because they give this a crunch, in addition to the salty addition of natural PB. Read on to find out.. Most people have switched to Olive oil for their primary or any kind of cooking because of its numerous benefits for the heart and body ♥️But is it really benefiting you? I think it’s causing you more harm than good. 😟 -

Ok don’t just judge me just yet !!! You need to know why !!! - 
Although Olive oil is beneficial for the heart (I made this point in my previous post as well, but well for a different myth), it cannot and must not be replaced for your primary oils (Rice bran, Sunflower, etc). - 
Majorly because Olive oil has a low smoking point. Which means when you heat this oil at a high temperature (beyond its smoking point), it starts emitting toxic smoke 💨which has compounds that are in fact harmful for our health. And this is not just picking something up from the Internet or Journals. When I was pursuing my Degree, our teachers made us do this experiment to prove the point ✔️✔️ -

Indian Cooking requires high temperature for cooking especially for curries and veggies. Whatever health components like Omega 3 and 6 fatty acids and other kind of antioxidants it possesses, are burnt 🕯️ at those temperatures. -

This does not mean you cannot use it at all. Cooking which requires minimum heat and less cooking time like Stir fried veggies, Hummus, Omelettes, Salads 🥗 etc go very well with Olive Oil. -

So now you know. Make use of this oil as it was meant to be used, in the right proportion and enjoy the various delicacies without guilt. -

I was so excited when I stumbled upon a farmers market yesterday which made me get a little crazy and buy far too much zucchini… with that being said – I made a loaf of zucchini bread, a cake, and a ton muffins – that actually ended up turning into muffin tops because someone forgot to spray the pan🙋🏼‍♀️🤦🏼‍♀️The secret ingredient to this delicious batch? @seekfood gluten-free cricket flour! There are multiple flours to choose from gluten-free, paleo, all-prupose, or pure… but my favorite is the gluten-free powder containing 40% more protein and 100% more fiber than the leading gluten-free powder.
DRY

Tonight’s dinner was good! I got veggie noodles (be careful cause some say veggie but are only like 10% veggie) and had some chicken with pesto! It was definitely good but I need some recipes that are easy but nutritional for teeth that hurt! My teeth still hurt to the point that the chicken was hard to chew still and I can only chew on my right side because of the braces! I’m struggling with my nutrition because of this! Give me a DM or a comment of some recipes!🤞🏼
