Yesterday, I asked you to pick between zucchini/summer squash and eggplant. I’m starting a new series where we focus on one vegetable and the myriad of ways you can cook, eat and love it. We’ll go over some basic techniques, talk about the vegetable itself and I’ll share my favorite ways to cook/eat it and recipes from around the internet that are inspiring ways to use it.
The aim will be for it to always be seasonal and to help you learn just how much you can do with a single vegetable. When I had a CSA I’d get kohlrabi and then spend forever looking for the perfect kohlrabi recipe and usually buy 10 other things to go along with it. Not exactly sustainable, cheap or fun. What I learned through having so much veg week in and week out that I had to use up was just how versatile most vegetables are. If you master a few basic techniques they apply to so many vegetables. There are also a few secret ingredients that should not be secret that I’ve come to rely on in my everyday cooking that we’ll dive into. Plus I’ll share my favorite vegetable forward cookbooks that have revolutionized how I approach making vegetables the center of my table. 🥦
This is going to be fun, we’ll be learning together along the way, and it will hopefully help with CSA/summer produce overwhelm, and above all I hope we can share together in the joy that cooking can I fuse into our lives daily.
