Dinner was everything I wanted to be. 🏽 Definitely made up for the rough start. Featured includes some smoked paprika roasted sweet potatoes, adobo seasoned tofu, roasted rainbow cauliflower, corn and @hummustir hummus. Couldn’t forget to top it with some extra goodies. My trio for this week will likely be cilantro, scallions and red pepper flakes. I made this bowl easier by pretty much roasting everything in the oven at the same time and also by going with pressed tofu and frozen items like frozen corn and cauliflower that I got all from Trader Joe’s.
To make the sweet potatoes, dice a large sweet potato into cubes and place on a lined baking sheet. Top with a little drizzle of soy sauce and sprinkle with garlic powder 1 tsp, smoked paprika (1 tsp) and oregano (2 tsp). Toss everything together to evenly coat and then pop in the oven at 400F for about 15-20 minutes or until you see some browning around the edges of the potatoes. - 6 hours ago
