Dinner last night in my dorm after a very long day. Safe to say I am thankful for two things 1) My new found love of Sauerkraut. 2) My dad for cooking me food that I can eat and sending me with enough for the week 😭♥️ Less then two more weeks of teacher training and i am TIRED! The dining hall hasn’t been the best with food allergies and I am so grateful for my parents who help me grocery shop on the weekends and support my dietary needs. I woke up this morning feeling really lethargic and achy so I slept in a bit instead of running. Hoping to get back to it tomorrow.

Happy Wednesday!!! We’re half way through the week and the weekend is in sight! It’s been a busy week at the Cordova’s with remodeling but I’m excited to finish it all. Why this one, if I’m not even deficient in it currently? Because I have been. In 2014 when I was first diagnosed with SIBO, I was so deficient in it that I did weekly B12 injections to my stomach. I loved this dinner from the other night 🌈 Gammon and egg always reminds me of good pub food 😊 I sautéed homegrown new potatoes in parsley and pure dairy free butter and they were delicious! I usually avoid processed meat all together but after checking the ingredients carefully on the smoked gammon I found it was good to go! It’s DAY 3 kids.... and it’s a rest day for me.  Rest. Recovery. Stretching.  Relaxing... I love my job 😍😍

Not going to lie... Getting back on the wagon, cutting out the crap is hard work some days, but when you eat better... you FEEL better... and as crazy as this sounds it totally makes me a better wife and mom too.

Cannot wait to see what is going to happen over these next 8 weeks.

One of the best things about the new effort of supermarkets to have gluten free products is that you don't have to miss out on things! Here's me with my @lovemorefoods chocolate celebration cake looking very happy. 😂 I was really impressed at the sponge, it was really moist and flavourful. The icing was thick and fudgy though it tasted very sweet. But tbh what more could you want from a birthday cake!? As far as I could tell it was low fodmap too, no pea fibre or inulin etc! 💕

I love making little drinks like this when I want something sweet, but also want to convince myself I am having something good for me haha. Turmeric has been found to have great anti inflammatory properties and antioxidant effects when combined with black pepper! 
My recipe below 👇

One serving: • 1/2 tsp Tumeric
• 1/2 tsp Cinnamon
• Pinch of cracked black pepper
• 1 tbsp maple syrup (depending on how sweet you want it) • 1 cup Almond Milk 
Put all ingredients into pot and heat slowly over the stove. Froth up with a little frothed thing (not sure what that's called?!). Sprinkle with a little bit of cinnamon on top 😊👍

1. Green smoothie with spinach, cucumber and frozen banana (<1min)
2. Pesto made from spinach, coriander, garlic, nuts, salt & olive oil pulsed in the blender (<5min), add to any meal. Use to flavour roasted vegetables, add to poached eggs or other proteins
3. Broccolini and asparagus steamed and quickly pan fried in sesame oil (<5min). Add to any meal. 
How can you pimp your meals with added greens? Some ideas for the fruit and veg challenge starting Sat 22 July. Who’s in? 
With the pesto alone I can just about consume a bag of spinach and a bunch of pesto with breakfast in the morning 💪🏼 A supplement may help fill a nutritional gap but does not replace real food and if your basics aren't there you will soon become deficient once you stop supplementing 😫

MOM GUILT. Drop a 🙋🏼‍♀️ if you’ve experienced it! .
It’s a REAL thing. I’m finding that the majority (if not all) Moms, whether you work or not, experience this at some point and that Mom on the left was CRIPPLED with it. She questioned & overthought everything she did. She tried to keep up with what the other Moms were doing, listened to the opinions others and tried to please EVERYONE! 😣

The Mom in between those two pictures started TRANSFORMING on the inside when she became a Coach —  Gaining a COMMUNITY of SUPPORT, paying it forward and rediscovering my purpose helped rebuild my confidence and stop caring what others thought — BUT, wanting MORE, being a go-getter left me feeling guilty sometimes, too.  I’ve caught myself holding back a little from my full potential and pushing my team to reach theirs because of this! 🤦🏼‍♀️ .
So ya know what — the Mom on the right is finally LETTING. IT. GO! Mom Guilt is UNFAIR to us and to our kids. It doesn’t make us better parents to feel guilty for living our purpose, going to work to pay the bills, that you had your kid repeat pre-school or that you bottle fed your baby.  If we’re not proud, confident & at peace with the decisions we make, it’s making us worse parents and inhibiting us from living out our purpose.  What good is it doing us if we’re showing our kids to feel guilty instead of enthusiastic and energetic?!?! 🤷🏼‍♀️

Being on a low FODMAP diet meant she had to change her recipe a little bit (which her Southern heart was not thrilled about) but let me tell you, a little @kingarthurflour (to make it gluten free) and some @enjoylifefoods chocolate chips (to keep it dairy free) keep her bread just as good as ever! Tonight involved a Les Mills GRIT class and a whole lot of sweat. 😅Exercise has really helped me and my crazy mind feel better about my belly recently and I’ve thrown myself into it. GRIT pushes you for half an hour until you think you’ll throw up but it’s sort of addictive. Then I’ve drove an hour down the road to stay in hotel for a work event tomorrow... SALTED CARAMEL BLONDIES 😍🍪🍫 (low fodmap, vegan, gluten free) I used my regular blondie recipe (on the blog) and added 3 tbsp Bickford’s salted caramel coffee syrup (sold in Coles), and then in place of chocolate chips used a chopped up Cadbury Dark Salted Caramel chocolate bar (this was the only non-vegan ingredient) but could easily swap for your fav vegan chocolate bar!

Instagram is great for a lot of reasons but my favourite thing about it has to be how many great ideas there are out there. I’d not really been a fan of GF pizza bases until a wave of pitta pizzas hit my feed - turns out all you need for a perfect GF pizza is a pack of @bfreefoods pittas 🍕 Load your pitta up with your favourite toppings, stick it in the over for 10-15 minutes, and you’re set! Pitta pizzas for the win 😁
