Kangaroo, kohlrabi (Vietnamese root vegetable), horseradish and a mirin. The horseradish added a lovely flavour at the end of this dish.
Before this came their tuna, parfait, beurre noisette and cured egg yoke dish which I didn't take photo of sadly. It was so bizarre, I'd never put those ingredients together but holy money it was tasty. Definitely stealing their cured and dehydrated egg yoke technique! - 5 hours ago
