Kale & Quinoa salad
fresh kale (washed and chopped - tip: to smooth kale for a softer texture take a touch of oil and rub it with the kale between your hands.
sweet potatoes (chopped into smaller sizes usually quarters)
Quinoa! 1 cup 1 or 2 eggs depending on what you're feelin, but quinoa has toms of protein so I felt one was sufficient
Dressing: 🍋2 tbsp lemon
1/2 olive oil 2 tbsp smooth honey Dijon mustard
1 tbsp honey
1 tbsp apple cider vinegar 2 medium garlic cloves minced (optional)
Instructions: sweet potatoes after cut, put some turmeric, and salt & pepper for taste, and then after mixing together with hands plop in the oven on 400° for about 15 minutes (give or take) mix all ingredients together and add some avocado on top if enjoyed and BON-APETITE! - 22 minutes ago
