This shot here of my vegan lemon curd bar is almost just as good as eating one! 🍋🍋 🍋
Recipe here ️ Line an 8x8 (or something close) baking dish with parchment paper
1/2 cup vegan butter
1/4 cup of granulated sugar
2 teaspoons of fresh lemon zest
1 cup of flour
Lemon curd ingredients:
1 pack (12 Oz) of silken tofu extra firm
1/2 cup of lemon juice (juice 4-5 lemons)
1 teaspoon of lemon zest
1 cup of granulated sugar
1/4 cup of powdered sugar
2 tablespoons of corn starch
2 teaspoons of vanilla extract
For the crust mix butter, sugar, and zest in a bowl or a mixer, add flour and mix again. Put the crust mix into the baking dish and pat it down.
Then in a food processor, mix tofu, lemon juice, zest, granulated and powdered sugar, corn starch, and vanilla and blend until creamy smooth.
Cook the crust for 20 minutes until golden on 350 degrees BEFORE pouring the lemon curd in. Let the crust cool for about 10-15 minutes. Then pour lemon curd in, and put it back into the oven for another 25-30 minutes to set the curd. Let it cool at room temperature for like 15 minutes then place it in the fridge for like an hour so it'll set.
Then cut and dust with powdered sugar and garnish with whatever you want! I used blueberries and mint leaves but anything works
