**LONG POST** I'm going back to basics and spending time with our Tres Fincas Signature Blend as my morning cup this week. We created this blend 5 years ago with Craig Holt and Drew Billups at the @atlas_coffee headquarters in Seattle, and have been maintaining its Integrity ever since. The goal was to create a blend of fully traceable coffees from three farms (Tres Fincas) that centered around our new relationship with Luis Alberto in Nicaragua. We wanted it to epitomize our roasting style and provide our customers with a classic breakfast blend style coffee. Nice crispness up front, but not overwhelming acidity, smooth body, nice sweetness and overall, a delicious cup of coffee most people would find enjoyable to drink first thing in the morning. And we have worked hard ever since to maintain what we created that day. I personally think the easiest thing to slack off on is something you do a lot of, and we roast a healthy amount of this coffee. So, in an effort to see if we're still hitting the mark, I've decided to make this blend my morning cup of coffee this week. It's one thing to taste coffees on a cupping table. It's another to brew them everyday and drink them the way your customers would. As I'm typing this post I am halfway through my first cup. So far so good. I'm enjoying what I'm tasting while I look out my front window, reflect on where we've come with this blend the last 5 Years and listen to the church bells ring here in Newport.
