I have been meaning to make something with eggplant for nearly a month now, but it seemed so intimidating. Some. Recipes have you let it sit in salt to release the liquid, others call for some hilariously small amount like a cup of eggplant (a full eggplant at HEB is atleast... 4 cups? And that is a pound), forcing me to search for tiny Asian eggplant which exist on the HEB website, but not in their stores ¯\_(ツ)_/¯ I thought I would have to venture out (err... Find a parking spot at) 99 Ranch. But then my favorite Indian food blog posted this recipe which uses 2 WHOLE EXTRA LARGE EGGPLANT IT'S SO GOOD! SO EASY! NO RARE SPICES! I basically kept it the same. I love the kick of the extra pepper I added, but it really doesn't need it. You are going to think you got too much eggplant, but it will cook down into 1/3 (at least) of its original volume.
