Looking for some summer salad inspiration to bring to your next outdoor party?

One of the challenges is to find a salad that can withstand the heat and not wilt if you make it in advance.

I have a mayo-free sweet potato salad. It ups the ante of boring white potato salad while also removing the gloppy mayo that withers in the heat (and doesn't taste that good anyway). My paleo sweet potato salad has some meaty flavor from crisp bacon (sugar and nitrate free of course!). Celery gives a nice crunch and a zesty vinaigrette brings all of the flavors together. 
Best of all, make it in advance and it'll be ready for party time! #summersalad .

I have ALWAYS struggled with it, probably always will, and my old scaring is absolutely what I am most self-conscious about! 🤦🏻‍♀️I have been on everything from topical’s to oral meds.…most extreme being accutane. That sucked. And after all that, the best remedy I have found is: EATING CLEAN, and EATING ALL THE COLORS!!! Whole & colorful foods are nourishing and essential for healing and getting that #healthyglow

I guess I’m the type of person who illustrates gluten free pancakes they ate four months ago in their free time? In all seriousness though, these pancakes from @honeyhi are my favorite. Remember how I said I was thinking about doing a 100 day challenge? Well this is day #1, and the only parameters around the things I’m going to design/illustrate is that they bring me joy (so let’s be real, it will likely be 90% food related). It probably won’t be 100 consecutive days but I WILL make it to 100 (realistic expectations are important ok, but so is accountability). I’m calling  it #ch100e, so stay tuned for more and wish me luck ✨✨ #the100dayproject

D A N D E L I O N. T E A. Did you know dandelion is a fabulous detoxifier for your liver?! I can remember my grandpa asking me to pick the green leaves on the dandelion to help him make a salad when I was a kid. They were super bitter (but tasted pretty good coated in olive oil and Parmesan cheese 😂)! This dandelion tea is MUCH less of an acquired taste. It’s delicious. Think of coffee if you were able to take away ALL the bitterness. What I love about @dandyblend too is that it’s instant. Just shake it up in some cold water, add a splash of coconut milk, some ice (if you like) and you’re detoxing the delicious way. Have you tried it?

I’ve been at it again in the kitchen. Since my injury almost 3 years ago, I learned one year ago how vitally important my food is for my healing. I’ve been following Cristina at @thecastawaykitchen for a while and love all the content she puts out for us. If you are Keto, AIP, Paleo, dairy free, nut free and/or nightshade free follow her! Also she just released her new Cookbook called Made Whole. Mine is arriving via Amazon tomorrow and I’m very excited! I’ve actually never purchased a cookbook ever in my life!! 🤗 
This morning I made her recipe for Chicken Salad (you can see some of this in my stories) and also boiled up some eggs 🥚...but I need to focus on them again next time because I cooked them too long but they still came out great! I just want to try the 7 minute egg which I’ve never tried. I didn’t have the packet for the seasonings as per the Chicken Salad recipe but I made my own with ingredients I had. I used the avocado mayo from @primalkitchenfoods which if you haven’t tried it you need to omg! So good. 🤗

This is easy, delicious, healthy and refreshing on this hot summer day. Thank you Cristina for all you do! Congratulations girl! 💖💖💖🎉

Tuesday got an extra kick last night with @sietefoods new vegan, dairy-free mild nacho cashew cheese which sent us to food heaven!😍👏🏼😭🌮It tastes so legit and is made with real, CLEAN ingredients. Had a very relaxing day today exploring around, buying some souvenirs, eating a donut the size of my head 😆, and putting my photography tips that I’ve learned this week to use! This retreat has been an absolute dream and I’m totally not ready to leave tomorrow 😕 I will definitely be back very sooooon haha! Our group is going on a little sunset hike tonight and I’m so excited because I’ve been craving a good hike 🙌🏼 Can’t wait to share pictures of that with you guys! (Regular food pics are going to resume soon if that’s all you want to see) 😉

A salad inspired by a @saladforpresident recipe in the #sfpcookbook (pulled chicken salad with napa cabbage and red curry puffed rice). Except there’s purple cabbage and collards instead of Napa cabbage, and I subbed cashews for the puffed rice because I couldn’t find any without cane sugar (grr) and added/left out a few other things. Whatever the case, this was gooood and added to my theory that everything is better when topped with crunchy seedy things.

Make your own homemade Paleo Fig Newtons!!! You need to try this. Tag all of your Paleo friends.

Homemade Paleo Fig Newton Cookies

Ingredients

1 cup dried figs
3 pitted Medjool dates
1/2 cup orange juice
2 eggs
1/3 cup coconut oil, melted
2 tsp maple syrup
1/2 tsp vanilla extract
2 cups almond meal
1 tsp baking soda
1/2 tsp salt

Instructions

1. Add the eggs, coconut oil, syrup, and vanilla extract to a bowl. Use a hand blender to combine. Add the almond meal, baking soda, and salt. Blend again until completely combined. Place in the refrigerator to chill until the figs are ready.

2. Place the figs, dates, and orange juice to a small saucepan over medium-low heat. Simmer for 10-12 minutes until the figs are soft and the juice is slightly reduced. Place the mixture into a blender or food processor. Blend until smooth.

3. Preheat the oven to 375 degrees F. Remove the dough from the refrigerator and place onto a sheet of parchment paper. Cover with another sheet of parchment paper and roll out the dough into a long thin rectangle, about 1/4-inch thick.

4. Spread the fig filling across the middle of the rectangle. Use the parchment paper to fold the bottom third of the dough over the top of the fig filling. Peel back the paper and repeat with the top third of the dough, forming a long log. Pinch the ends of the log together to seal in the filling. Use a sharp knife to cut the log into the desired amount of pieces. Space the pieces out on the parchment paper and place onto a baking sheet. Bake for 15-18 minutes, or until the edges are golden brown. Let cool for 20 minutes before serving. Store in an airtight container.

. 🍃Big tup of greens + protein (tuna, chicken breast, turkey etc) + avocado is essential! Plus my dressing of choice which varies from day to day.
🍃Veggies + hummus tup (carrots, celery, cucumber, peppers, crakerz)

🍃Fruit (grapes, blueberries, apples or seasonal fruit)

🍃Snacks- usually a protein bar but lately, I’ve been really into @chomps turkey snacks sticks— I was never into jerky until I tried @chomps! Our whole group took a catamaran out to sea today and it was SO fun!! We rode around to see allll the beautiful places, jumped off the boat, snorkeled, and ate THE tastiest food! The fried flounder was amazing and so light 🙌🏼 And I’m definitely going to be making lots of Greek salads when I get home, even though they won’t be as good as these authentic ones 😆 Tonight we’re making homemade gelato at the house, so I’m excited to show you guys how that turns out! Happy Tuesday friends 💛

This breakfast makes me so happy! 😁It's an awesome way to start your day because it has protein, healthy fat, greens and a carb! -------------------------------------------------
✨Ingredients:
1 egg
1/2 plantain 
1/2 avocado 
A handful of chopped kale
Everything but the bagel seasoning. ------------------------------------------------- ✨Recipe:
1. Cut the plantain in half and then cut the end off.  Score the peel in 3-4 places and then remove each piece. 
2. Cut into thin slices.
3. Heat avocado oil on medium high heat and add the plantains.  Salt the tops. 
4. Crack the egg into the same pan and prepare however you like. 
5. Flip the plantains once they are golden brown on the first side. 
6. While everything is cooking and almost done, add the kale, a little more avocado oil and salt.  Toss until  soft and slightly crispy. 
7. Plate everything and then add half an avocado. 
8. Season the avocado and egg with the "Everything but the bagel" seasoning and some red pepper flakes! 
Enjoy! 👌🏻

Over a year later and I’m back. I found it super hard to eat anything worth talking about while pregnant, and now that I have a two month old baby I’m slowly feeling back to normal! I’ve moved across the country, have a new batch of booch brewin up, and all sorts of fresh produce at my finger tips. Fresh food is a TON cheaper here! Tonight I whipped up some mashed cauliflower, pork medallions, and topped it with a blueberry compote. I think the blueberries on top got the little boys give it a whirl 🙏🏻 #paleo #paleodinner #dairyfree #lowcarb #paleofood #wellfed #mashedcauliflower #eatrealfood #grainfree #cleaneating #healthyfood #paleofoodie #paleofoodshare #forkyeah

It doesn't get much better than guac, does it?! Especially with my favorite @latejulyorganic tortilla chips! I could eat this stuff every.single.day!  Take the few minutes and make your own.  You won't regret it!! 🥑Guacamole recipe🥑

2 avocados mashed 
1/4 cup finely diced red onion
1 tsp minced garlic
1 handful chopped cilantro
Juice of 1/2 a lime 
1 tsp salt 
1/2 tsp cumin

Mix everything together and enjoy with your favorite chips or veggies! 🙌🏻
