Honey and sesame chicken stir fry for a quick and easy dinner. I prepped this chicken and marinaded it for 24 hours then it only took 10 minutes to cook.
.
500g boneless, skinless chicken thighs
4 tbsp liquid aminos
4 tbsp cider vinegar
2 tbsp honey
1 tbsp sesame seeds
2 cloves garlic, crushed
1 inch piece ginger, grated
2 tbsp fresh coriander, chopped
1 chilli, sliced
150g mushrooms, sliced
100g tender stem broccoli
Fresh coriander to garnish .

Slice the chicken thighs into 1-inch strips and mix with the marinade ingredients (aminos, vinegar, honey, sesame seeds, chilli, garlic and ginger) and leave to marinade for minimum 30 minutes and up to 24 hours. When ready to cook pour the chicken and marinade in a heated non-stick pan and cook for 8-10 minutes, until almost fully cooked. Then add the veggies and cook for a further 3 minutes until they are cooked but still crunchy. Serve with fresh coriander.

I was able to pick 3 cucumbers out if the garden today 💕
My fav cucumber salad. It usually calls for sugar, but I subbed honey and it's delish!

Recipe:
3 cucumbers peeled and sliced
1 yellow onion cut in 1/2 and thinley sliced
1 cup Avacado Mayo
2 tbs white vinegar 
2 tbs honey (more to taste)
A dash or so of celery seed to taste.
Mix everything but the cucumbers and onions to make a dressing and then pour into cukes and onions and mix.

This is my all-time favorite healthy lunch! Includes grilled red onion, zucchini, yellow squash, bell peppers and asparagus with a tangy lime sauce (YUM!) Grilled Veggie Salad Platter with Lime Sauce

Ingredients

4 medium zucchini
1 medium yellow squash
1 red bell pepper
1 yellow bell pepper
1 red onion, thinly sliced
1 lb. asparagus, ends trimmed
Extra virgin olive oil, for drizzling

For the Sauce

1/4 cup Paleo mayonnaise
Juice of 1 lime
2 cloves garlic, crushed
1 tsp cumin
Salt & pepper, to taste

Instructions

1. Slice the zucchini and squash in half lengthwise and then into 1/2-inch thick slices. In a medium bowl, whisk together all of the ingredients for the sauce. Season to taste with salt and pepper. Set aside.

2. Preheat the grill to low heat. Lightly drizzle the vegetables with olive oil and toss to coat. Working in batches, place the vegetables onto the grill in a single layer. Close the lid and cook for 10-12 minutes, turning once. Transfer to a serving plate and serve alongside the cumin sauce.
