The best #soursoup is made with the Romanian bors (that’s “bors”!). It’s a vegan sour soup so not meat, lots of veggies (including mushrooms, some sweet potatoes, lots of soluble fiber from all the veggies which is always good for gut health) plus the sour taste from the “bors”.

Borș is a liquid ingredient used in Romanian and Moldovan cuisine to make traditional sour soup called also “borș” or “ciorbă”. This ingredient consists of wheat or barley bran, sometimes sugar beet, fermented in water - a slightly yellowish, sour liquid, which can also be drunk as such. The word has thus two different, if related meanings.

I served my soup with raw cheese, organic kalamata olives and jalapeños. This is one of my dinner ideas. This is what I ate foe dinner most of the time living in #Romania so it’s practical and nutritious.

When I feel the need for something #chocolate I always always go for dark chocolate. This time it was @vivani_chocolate which happens to be one of my favorite brand. Too bad one can’t buy this on every store in Romania! By the way, as with all quality produce, the price is almost the same as in Norway but (fun fact here!!) Norway is the most expensive country in the world 😀

I must confess that I discovered cream soups only after I decided to stop eating meat. Once you take out something from your plate you make room for something else. This particular soup is #vegan but this doesn't stop me from packing lots and lots of nutrients into this fairly small soup bowl. I came to understand that plants are loaded with nutrients like vitamins, minerals, antioxidants, phytonutrients and enzymes, things that meat just doesn't have. Plus with a soup like this, one doesn't feel the need to add bread, which is always a must if one wants to live #healthy.

My advice to anyone wanting to change something in their way of eating: just use my recipe below and don't look back 😀

INGREDIENTS
- broccoli (fresh or frozen)
- cauliflower (fresh or frozen)
- mushrooms (fresh or frozen)
- green peas (fresh or frozen)
- yellow or red bell pepper
- celery stick
- carrots
- Himalayan salt
- spices (basil, cayenne, thyme or anything you like really)
- avocado
- 2-3 tsp coconut oil
.
INSTRUCTIONS
1. Boil all the veggies for a few minutes or until they become soft. Don't over do it.
2. Remove from boil and add them into the blender. Also add a bit of the water from the boiled veggies.
3. Add the avocado, extra virgin coconut oil, spices and salt into the blender.
4. Blend until you get a smooth creamy consistency.
5. That's it! Enjoy hot or cold. For an extra taste, serve with your favorite kind of olives (I like Kalamata or Zaromenes)

A new day, a new #smoothie . This time it’s called MADE WITH LOVE, DARK RED SMOOTHIE #redsmoothie
This is a smoothie made mostly from leftovers veggies (well, sort of … what leftovers means for us anyway, we usually have lots of veggies at hand). For a pretty quick smoothie, full of berries and no avocado, it tastes surprisingly good. And it’s so easy to drink, there’s not a strong taste from the leeks for example (my wife doesn't like leeks in her smoothies) but you sort of know it’s there. When you drink this you sort of feel all those antioxidants and phytonutrients hitting you and powering you for the entire day #plantbased

Recipe below:
- 1 bok choy
- 1/2 cucumber fabio
- 2-3 tbsp extra virgin coconut oil
- 5 cm leeks
- 250g frozen blueberries
- 200-250g frozen spinach
- 2 organic bananas
- 1 organic red beet
- 1 tsp cinnamon powder
- 1 tsp turmeric powder
- 1 tsp ginger powder
- 1 tsp cardamom powder
- 1 tsp schinduf piwder
- 1/2 tsp himalayan salt
- 1/4 organic lemon
- 500 ml water

Note: These quantities will give you 4 smoothie jars like the ones in my picture ☝️

Smoothies are my favorite way of starting the day. I’m always using avocado and extra virgin coconut oil with lots of veggies (fresh or frozen, mostly organic) and 1-2 fruits or frozen berries (depending what I can buy). Warming spices always add the finishing touch and I like using cinnamon, cardamom, ginger, turmeric or Himalayan salt.

What to do when you suddenly have fresh spring cabbage in your fridge? Make a CABBAGE AND SPINACH SWEET #SMOOTHIE ... what else?

Recipe is below:
- 5 leaves cabbage
- 1 stick celery
- 2 bananas (organic)
- 1 slice fennel
- 2 avocados (organic)
- 1 slice lemon (organic)
- 150g frozen spinach (organic, 4-5 big pieces)
- 2 tbsp sea buckthorn
- Fresh turmeric
- Fresh ginger (organic)
- 2 dates
- 1 tsp ginger powder (organic)
- 1 tsp raw cacao powder (organic)
- 2 tsp pomegranate powder (organic)
- 1 tsp dandelion powder (organic)
- 4 tsp cacao butter (organic)
- Fresh dill
- 1/2 tspHimalayan salt
- 600 ml water (lots of veggies with water are already included)

Note “organic” means I used an organic ingredient there, you can safely use conventional grown ingredients 😀

Some of the most healthiest plants are green ... plants like spinach, broccoli, bok choy, celery, lettuce, cucumber, avocado and many others are filled with vitamins, minerals, enzymes, antioxidants and phytonutrients. And they're all green so I guess it makes sense to link green smoothie to healthy smoothies.

What I don't like about many of the green smoothies out there is they're usually made with too many sugary fruits. And they’re too sweet for a healthy person. On top of all the sweetness (read “fructose”), spinach, broccoli or avocado are added to give them the green color. But the bulk of the smoothie if made of sugary fruits.

Talking purely about the health benefits, in my opinion that's not a green smoothie, that's a sugar bomb and you do not want that in your system.

You want to make yourself a green smoothie using mostly veggies and maybe 1-2 fruits that are preferably low in sugar. For example, this smoothie was made using cucumber, avocado, apple, carrots, spinach, celery, kale, banana and warming spices.

I think It's too easy to make your smoothie at home so why bother buying one when you can make it using your own organic ingredients? At least buy yourself a custom made smoothie with only the ingredients you want. After all, it's your health that's the most important for you.

My secret ingredients were mushrooms, green peas, green beans, broccoli, bell peppers, shallots, leeks, parsnip, one apple and lots of creative spices (garlic cloves, fresh ginger, bay leaves, cayenne, black pepper plus himalayan salt). It has a wonderfully sweet taste (from all those nourishing veggies that I used) but it also has a special minty-ginger aftertaste that tells you to get yourself another serving 😀 Combine this with avocado, fresh tomato and zaromenes or kalamata olives and you have a winner #lunchtime .
Who says cooking has to be complicated. Personally I don’t trust someone that doesn’t know how to cook ... Enjoy!

A simple alternative to daily breakfast smoothies are cream soups. You boil the veggies and afterwards blend them while adding a fat source (avocado? Coconut oil? EVOO maybe?) and spices (salt, cayenne, dried herbs, etc).

I love my espresso. It's a special espresso, it sells in a tinny little coffee shop in the heart of #Bucharest. My coffee shop is located in one of the oldest streets in this city, the one that queens and kings used to walk on. It's a street loaded with history, the street that ruled in the 19th and the 20th century. Back in the 20s it was "the street to walk on". Everyone was there and you would feel the smell of the spring grass the way you feel it today, My street is close to one of the beautiful parks the city of Bucharest has to offer, it's called Cismigiu Gardens and it's full of history like this beautiful street in this beautiful city. Here’s another SOUR SOUP WITH VEGGIES, this time made using lots of green beans and green peas on top of my usual veggies (carrots, celery, shallots, fennel, garlic). I’m also including a sweet potato and a bit of risotto rice.
No sour soup is perfect w/out the traditions “sour bors”, 1-2 beaten eggs, salt and pepper 😀

Spinach it’s in season here in Romania and it's so fresh and good. It happens that we're eating vegan or vegetarian these days so spinach is present almost daily in our meal plan. It’s also loaded with nutrients so why would you want to skip it anyway? 
I'm serving a skillet with spinach, veggies, spices, walnuts and a white cheese variety called "cas” (Romanian variety made from raw milk).

One simple way to include more veggies into your diet is to make soups. I always liked soups and they're part of the Romanian cuisine but this year I've literally rediscovered sour soups made only with veggies. I like to include lots of fresh organic veggies, aromatic herbs and the traditional "bors".

What exactly is this “bors”? 🎶 ... “Bors" is a liquid ingredient used in the Romanian and Moldovan cuisines to make traditional sour soups. It consists of wheat or barley bran, sometimes sugar beet, fermented in water- a slightly yellowish, sour liquid, which can also be drunk as such.

So to recap:
- Veggies are great to make soups.
- I try to use organic or at least locally produced veggies.
- These days I mostly cook soup soups.
- "Borș" is a liquid ingredient used in the Romanian and Moldovan cuisines to make traditional sour soups.

This is one of my favourite desserts ever because it tastes great, it's homemade, it's healthy and it's way too easy to make.

Recipe below:
- 500 ml raw cream
- 2 organic bananas
- 3 tbsp blackberries
- 3-4 tbsp blueberries
- 1 tsp cinnamon
- 1 tsp vanilla extract (liquid)
- 10 pecans (needed more)
- Optional: chocolate squares and more frozen berries (for decoration)
- 
Mix all the ingredients in a blender until combined. Blend a little more and you'll get a thicker consistency (from the raw cream). Pour in a glass of your choice and decorate with berries and chocolate squares.

- 1 slice fennel - 2 avocados (organic)
- 1 slice lemon (organic)
- 150g frozen spinach (organic, 4-5 big pieces)
- 2 tbsp sea buckthorn
- Fresh turmeric
- Fresh ginger (organic)
- 2 dates
- 1 tsp ginger powder (organic)
- 1 tsp raw cacao powder (organic)
- 2 tsp pomegranate powder (organic)
- 1 tsp dandelion powder (organic)
- 4 tsp cacao butter (organic)
- Fresh dill
- 1/2 tspHimalayan salt
- 600 ml water (lots of veggies with water are already included)

Today it was time for a red #smoothie, namely THE RED SMOOTHIE BAR (strange name, I know). Where does the name comes from? Well, it looked like a smoothie bar on our kitchen table since we filled 5 big smoothie jars with this magical sweet smoothie full of blueberries and cranberries. No alcohol here, only veggies please! 😀

- ½ medium bowl lightly boiled veggies (green beans, sweet potato, broccoli)
- 2 avocado (organic)
- 1 stick celery
- A few bouquets fresh broccoli
- ½ banana (organic)
- Fresh mint leaves
- 5-10 cm cucumber fabio (organic)
- 2 golden apples
- 5 tbsp blueberries and cranberries mix (organic)
- 2 tbsp sea buckthorn (organic)
- 1 tsp ginger powder (organic)

A new day, a new #smoothie . This time it’s called MADE WITH LOVE, DARK RED SMOOTHIE #redsmoothie
This is a smoothie made mostly from leftovers veggies (well, sort of … what leftovers means for us anyway, we usually have lots of veggies at hand). For a pretty quick smoothie, full of berries and no avocado, it tastes surprisingly good. And it’s so easy to drink, there’s not a strong taste from the leeks for example (my wife doesn't like leeks in her smoothies) but you sort of know it’s there. When you drink this you sort of feel all those antioxidants and phytonutrients hitting you and powering you for the entire day #plantbased

Recipe below:
- 1 bok choy
- 1/2 cucumber fabio
- 2-3 tbsp extra virgin coconut oil
- 5 cm leeks
- 250g frozen blueberries
- 200-250g frozen spinach
- 2 organic bananas
- 1 organic red beet
- 1 tsp cinnamon powder
- 1 tsp turmeric powder
- 1 tsp ginger powder
- 1 tsp cardamom powder
- 1 tsp schinduf piwder
- 1/2 tsp himalayan salt
- 1/4 organic lemon

This time it’s called MADE WITH LOVE, DARK RED SMOOTHIE #redsmoothie This is a smoothie made mostly from leftovers veggies (well, sort of … what leftovers means for us anyway, we usually have lots of veggies at hand). For a pretty quick smoothie, full of berries and no avocado, it tastes surprisingly good. And it’s so easy to drink, there’s not a strong taste from the leeks for example (my wife doesn't like leeks in her smoothies) but you sort of know it’s there. When you drink this you sort of feel all those antioxidants and phytonutrients hitting you and powering you for the entire day #plantbased . I’m boosting my mornings with one of these: MY GREEN MEXICAN SMOOTHIE. Today it was a green smoothie but it can easily be a red one. Or a orange one. Or another shade of red or green. Believe it or not, I’ve also made yellow smoothies. Or even purple smoothies w/ lots of berries in them. Or using sour cherries. Anyway, the point is I make daily smoothies and all of them are made from fresh organic veggies using minimum of fruits and lots of healthy fats plus warming spices.
I wasn’t a smoothie person myself, not until last autumn when I decided enough eggs are enough and that I should up my veggies intake. Here I am, almost 6 months later and in better shape than ever. I guess smoothies are here to stay, or at least for me they are 🥦🥒🥕🍓🍐🍅🌶🍎🍌🍒🥑🥤💪🏻

Raw Whipped Cream w/ Berries
.
Ingredients
- 500-600 ml raw cream (35% fat, please buy raw and not pasteurized cream, preferably from grass fed cows)
- 4 tsp coconut sugar
- 1-2 tsp vanilla liquid extract
- 1-2 tsp organic cinnamon
- 4 tbsp blueberries and cranberries
- 1-2 tsp sweet jam from 🌹 (for decoration only)

Preparation
1. Add everything into a large bowl, all except the berries.
2. Use a whisk or a mixer to beat the cream until you get that solid consistency.
3. Once done, add whipped cream on top of the berries (like in my picture) and decorate using anything from liquid chocolate to homemade sweet jam (like I did).
4. Let it sit on the fridge for 30-60 min. And don’t over do it with the sweet jam or else!

How about more energy, better immune system, less hunger, mental clarity, better skin, weight-loss in terms of body fat, being fat adapted and using fat as many energy source, more creativity, and the list can go on and on. It's not often that we take breakfast like "normal" people, with eggs, ham, olives, avocado, veggies, brie and other cheeses ... basically a full table. Usually our table looks very clean and tidy at breakfast because we prefer smoothies. But this was one special meal, I mean we were hungry for that French brie and that traditional Romanian cheese. We wanted to eat all those boiled eggs and the avocado too. So I grabbed a few pictures while my wife wasn't in the room, she usually doesn't like me to take pictures when she's hungry ... My take on this plate of BASMATI RICE WITH MUSHROOMS AND CARROTS

Do you want the good flora in your belly to be happy? Those little guys inside your gut need to eat something and one of the things they like to eat is prebiotics.
.
👉 What are prebiotics?
Prebiotics are food for probiotics (for your gut bacteria).
.
👉 Why is this important?
If your gut bacteria are healthy and the balance between so called “good” and “bad” bacteria is correct, your body will be healthy, you will be healthy. The health starts in the gut, that’s a known fact that can’t be denied anymore. So please, please watch out for what you choose to put in your mouth as you can either feed or damage the indispensable gut bacteria that keep you alive. By the way,. did you knew that in the human body, bacteria outnumber our cells by a ratio of 10 to 1?

👉 Ingredients
- 150-200g organic white Basmati rice
- 2 organic carrots
- 150g organic crimini mushrooms
- fresh dill
- ½ tsp dried basil
- ¼ tsp dried anise
- Himalayan salt
- Water
.
👉 Instructions
- Chop the carrots and mushrooms into small pieces
- Boil the rice together with the chopped carrots and mushrooms
- Once the rice is done, remove all the water and transfer everything into a big dish
- Add the fresh dill, dried basil and dried anise. Mix everything and add salt to the taste.
- You could serve it like this but, for an even more healthy version of this dish, mix everything with raw butter
- Serve cooled in order to get all the benefits of resistant starch and prebiotics that come with it.
- Zaromenes olives and pickles are also on the plate.

Here's a list with all the plants and spices that I used for these 4 tasty smoothies.

✔️ Number 1: Avocado, carrots, cucumber, bell pepper, apples, red beet, banana, celery, fennel, coconut oil, hemp seeds, dried dates, warming spices.

✔️ Number 2: Frozen spinach, cucumber, celery, apples, carrot, cabbage, chia + hemp, coconut oil, warming spices.
.
✔️ Number 3: Avocado, banana, carrots, celery, cucumber, apple, cabbage, berries mix, hemp + chia seeds, warming spices.
.
✔️ Number 4: Apples, carrots, red beet, cucumber, red cabbage, raspberries, celery, coconut oil, raw cacao, chia + hemp seeds, raw cacao, warming spices.

I’m always using avocado and extra virgin coconut oil with lots of veggies (fresh or frozen, mostly organic) and 1-2 fruits or frozen berries (depending what I can buy). Warming spices always add the finishing touch and I like using cinnamon, cardamom, ginger, turmeric or Himalayan salt.

Dark #chocolate is my favorite chocolate snack. Gone are the days of milk chocolate or other milk based high sugary so-called chocolate treats. Those will make you sick b’cause they’re full of sugar, poor quality cocoa (not cacao) and they have lots of additives that you do not want to put in your precious body. So either stick w/ something like this or get cacao mass or butter.

When we want a super quick healthy desert we always go for raw cream with a mix of frozen berries. Don’t forget to add the cinnamon, vanilla and dry prunes. It only takes a couple of minutes to prep 😍 @refreshmyhealth

Things are pretty simple when it comes to fruit:
- always buy organic, they taste better and have less pesticides, plus your money go mostly to the farmer
- fruits have too much sugar so better keep your intake low (2-3 fruits/day are ok)
- fruits and smoothies are always a bad idea so use no more than 2-3 fruits for a big smoothie jar
- because of the high sugar content that fruits have (fructose) you’ll not benefit too much from their vitamins
- fruit juice is a bad idea because you filter the pulp and you end-up with even more fructose
- always choose a fruit vs a man made sweet
- fruits are healthier than their juices
- a juice made from fruits will last 2-3 days in the fridge ... still think that packaged juices are a good idea?
- try to eat fruits when they’re in season and tree ripen
- organic bananas taste great, try to buy them when they’re green and allow them to ripe naturally in a fee days
- if you feel that you’re adding too many fruits to your smoothies, try adding veggies instead and you’ll be amazed by how good veggie smoothies are
- the fruits that are lowest in fructose are berries
- some fruits are high in good fats, these are coconuts, avocados and olives (yes, they’re fruits) ... eat these as much as possible

The other day we’ve prepared the most interesting LENTILS SOUP. We used a pretty simple and easy to make recipe that I’m going to share with you below.

Besides lentils this soup is made using small onions (shallots), fresh ginger, garlic cloves, one bell pepper, few slices of leeks, salt, cayenne pepper, dried basil and raw butter. Just boil all the veggies and the lentils together and, once done, separate from the water and blend everything until you get a smooth texture. Now add the spices and the butter and blend some more until you’ve incorporated everything into the soup. Serve with a few walnuts on top 👍

Note: you might want to soak your lentils overnight in plain water with a bit of lemon juice. This will make it easier to cook and will also remove some of the anti-nutrients that all legumes have. This is especially important if you eat legumes like this on a daily basis.

Do you know those moments when you have a lot of food in the house but you go shopping because you feel like there's nothing to eat? Well, it happened to us today! Maybe it was just an excuse to count in some more walking time but one thing is certain, we walked around 8-9 Km in the freezing cold (-4 Celsius) and it felt great. My favourite time to walk is at night when the city sleeps so it was perfect. I'm always grateful for the fact that I can just walk whenever I want, I don't feel tired anymore and I know how to recharge my batteries in case I do get tired (I'm human, you know). As for the recovery dinner, we ate this wonderful vegetarian plate made from the following:
- potatoes and carrots purée (also added one bell pepper, one golden apple, a chunk of raw butter, himalayan salt and organic spices: anise and basil)
- organic boiled peas
- organic soft boiled eggs
- greek feta cheese (sheep + goat)

There are no rules when it comes to making a healthy salad, just use quality organic ingredients, healthy fats and a good extra virgin olive oil. The olive oil will add so much to the final taste so I always choose a Greek evoo @gaeaoliveoil but you can choose any brand you like (just make sure it’s authentic).

My best kept secret for #homemadechocolate is cacao liquor (also named cacao mass or cacao paste). One of the purest forms of cacao, full of antioxidants, comes almost unprocessed and usually from organic sources. You can feel that subtle dark smell and the fermented taste of pure cacao beans. After all, all the wonderful things that are obtained from cacao beans are the result of a fermentation process. Wonderful! 🙏

PS: please don’t call these ‘cocoa’, the correct name is ‘cacao’. Cocoa refers to the cacao products obtained trough a heating process as opposed to the raw process that’s used to extract cacao products from raw cacao beans.

One of those #paleo meals, very simple yet very tasty, and the moment you ask yourself why this didn’t tasted so good a few years back? ... one moment later and the answer follows: maybe because my body was so malnourished that it wasn’t able to recognize #realfood anymore?! Just sayin’ 🙏

My plate is made from the following:
- a mix of boiled veggies and 1 golden apple
- a few raw pecans and 2-3 radishes
And I’ve used what fresh veggies I had in the house: green peas, mini mushrooms, sweet potato, red and green bell peppers and broccoli; feel free to also add cauliflower, jalapeños, white potatoes, carrots or others.
Add salt and spices if you want (I didn’t) and serve hot or cold. Enjoy!

One of those #paleo meals, very simple yet very tasty, and the moment you ask yourself why this didn’t tasted so good a few years back? ... one moment later and the answer follows: maybe because my body was so malnourished that it wasn’t able to recognize #realfood anymore?! Just sayin’ . My plate is made from the following: - a mix of boiled veggies and 1 golden apple - a few raw pecans and 2-3 radishes And I’ve used what fresh veggies I had in the house: green peas, mini mushrooms, sweet potato, red and green bell peppers and broccoli; feel free to also add cauliflower, jalapeños, white potatoes, carrots or others. Add salt and spices if you want (I didn’t) and serve hot or cold. It was green smoothies week in our family and there you have it: the smoothies line-up! We had a very busy week-end and since staying healthy and eating natural is always a must for us, this was the drink for us this week-end 
I've used a bunch of different veggies and a few fruits in various proportions. Here's my entire list for this week-end:
- avocado
- frozen spinach
- celery (apio)
- green and yellow apples
- cucumbers
- carrots
- broccoli
- fennel
- red cabbage leaves
- organic lemon (juice and peel)
- spices (ginger, turmeric, cardamom, cinnamon)
- chia and hemp seeds
- extra virgin coconut oil
- himalayan salt
- water or cashew milk

... Plus A LOT of playing around with colors, ingredients, quantities and textures. That’s it!

I like #smoothies but I “discovered” them quite by accident: one day I was feeling hungry for anything but eggs for breakfast, had lots of veggies, fruits and spices around and a cheap blender at hand. And that’s where my smoothie journey began.

As for my recipes, it doesn’t feel right to me if my #smoothie doesn’t have at least 10 different ingredients. This one has its red color from a combination of blueberries and red beet but other than this, I mostly add veggies into my smoothies, along with low-carb fruits, healthy fats and spices.
