Things are pretty simple when it comes to fruit:
- always buy organic, they taste better and have less pesticides, plus your money go mostly to the farmer
- fruits have too much sugar so better keep your intake low (2-3 fruits/day are ok)
- fruits and smoothies are always a bad idea so use no more than 2-3 fruits for a big smoothie jar
- because of the high sugar content that fruits have (fructose) you’ll not benefit too much from their vitamins
- fruit juice is a bad idea because you filter the pulp and you end-up with even more fructose
- always choose a fruit vs a man made sweet
- fruits are healthier than their juices
- a juice made from fruits will last 2-3 days in the fridge ... still think that packaged juices are a good idea?
- try to eat fruits when they’re in season and tree ripen
- organic bananas taste great, try to buy them when they’re green and allow them to ripe naturally in a fee days
- if you feel that you’re adding too many fruits to your smoothies, try adding veggies instead and you’ll be amazed by how good veggie smoothies are
- the fruits that are lowest in fructose are berries
- some fruits are high in good fats, these are coconuts, avocados and olives (yes, they’re fruits) ... eat these as much as possible

This one is made with over 15 ingredients, including warming asian spices (turmeric, cinnamon, ginger, cardamom), green veggies (bok choy and broccoli) or healthy fats (avocado and coconut oil) plus other beautiful veggies like carrots, bell pepper, tomato and so on. The other day we’ve prepared the most interesting LENTILS SOUP. We used a pretty simple and easy to make recipe that I’m going to share with you below.

Besides lentils this soup is made using small onions (shallots), fresh ginger, garlic cloves, one bell pepper, few slices of leeks, salt, cayenne pepper, dried basil and raw butter. Just boil all the veggies and the lentils together and, once done, separate from the water and blend everything until you get a smooth texture. Now add the spices and the butter and blend some more until you’ve incorporated everything into the soup. Serve with a few walnuts on top 👍

Note: you might want to soak your lentils overnight in plain water with a bit of lemon juice. This will make it easier to cook and will also remove some of the anti-nutrients that all legumes have. This is especially important if you eat legumes like this on a daily basis.

Do you know those moments when you have a lot of food in the house but you go shopping because you feel like there's nothing to eat? Well, it happened to us today! Maybe it was just an excuse to count in some more walking time but one thing is certain, we walked around 8-9 Km in the freezing cold (-4 Celsius) and it felt great. My favourite time to walk is at night when the city sleeps so it was perfect. I'm always grateful for the fact that I can just walk whenever I want, I don't feel tired anymore and I know how to recharge my batteries in case I do get tired (I'm human, you know). As for the recovery dinner, we ate this wonderful vegetarian plate made from the following:
- potatoes and carrots purée (also added one bell pepper, one golden apple, a chunk of raw butter, himalayan salt and organic spices: anise and basil)
- organic boiled peas
- organic soft boiled eggs
- greek feta cheese (sheep + goat)

There are no rules when it comes to making a healthy salad, just use quality organic ingredients, healthy fats and a good extra virgin olive oil. The olive oil will add so much to the final taste so I always choose a Greek evoo @gaeaoliveoil but you can choose any brand you like (just make sure it’s authentic).

My best kept secret for #homemadechocolate is cacao liquor (also named cacao mass or cacao paste). One of the purest forms of cacao, full of antioxidants, comes almost unprocessed and usually from organic sources. You can feel that subtle dark smell and the fermented taste of pure cacao beans. After all, all the wonderful things that are obtained from cacao beans are the result of a fermentation process. Wonderful! 🙏

PS: please don’t call these ‘cocoa’, the correct name is ‘cacao’. Cocoa refers to the cacao products obtained trough a heating process as opposed to the raw process that’s used to extract cacao products from raw cacao beans.

One of those #paleo meals, very simple yet very tasty, and the moment you ask yourself why this didn’t tasted so good a few years back? ... one moment later and the answer follows: maybe because my body was so malnourished that it wasn’t able to recognize #realfood anymore?! Just sayin’ 🙏

My plate is made from the following:
- a mix of boiled veggies and 1 golden apple
- a few raw pecans and 2-3 radishes
And I’ve used what fresh veggies I had in the house: green peas, mini mushrooms, sweet potato, red and green bell peppers and broccoli; feel free to also add cauliflower, jalapeños, white potatoes, carrots or others.
Add salt and spices if you want (I didn’t) and serve hot or cold. Enjoy!

I like #smoothies but I “discovered” them quite by accident: one day I was feeling hungry for anything but eggs for breakfast, had lots of veggies, fruits and spices around and a cheap blender at hand. And that’s where my smoothie journey began.

As for my recipes, it doesn’t feel right to me if my #smoothie doesn’t have at least 10 different ingredients. This one has its red color from a combination of blueberries and red beet but other than this, I mostly add veggies into my smoothies, along with low-carb fruits, healthy fats and spices.

This is my “back to work week”, I never take vacation during holidays, instead I keep a more relaxed pace. You know, active vacation 👍🙏

Back to these raw cookies, please find this recipe below. Enjoy!

INGREDIENTS
.
- 1 jar organic cashew nut butter (170-200g)
- 3 tbsp extra virgin coconut oil (90-100 ml)
- 1 handful organic coconut flakes
- 20-30g unsalted butter (preferably raw)
- 1 cup cashew and walnuts (pecans will do as well)
- 4 organic dried dates, chopped
- pinch of himalayan salt
.
INSTRUCTIONS
.
Add all the wet ingredients (everything besides nuts, dates and salt) into a blender and mix on the slowest speed possible. Better yet, you can mix them manually in a bowl. 
Once mixed, pour into a wide glass container and spread evenly. The contents should be about 1-1.5 cm in height as that will be the height of your cookies.
Add himalayan salt on top, make sure to spread it but don’t mix it, instead let it stay on top of the mixture.
Now it’s time to add the dry ingredients one by one. Sprinkle chopped dates on top and let them dive into the mixture by themselves.
Next, carefully arrange your nuts on top of the mixture (they will sort of stay on the dates), making sure you don’t soak them in any way. You sort of want them to stay on top of everything.
Move the container into the fridge for overnight or for at least 12 hours. 
By the next morning you’ll end-up with a solid mixture that you can cut into pieces. Cut in square like pieces and serve while it’s cold.

This was my breakfast for today: RED BEETS AND POMEGRANATE SMOOTHIE W/ 🥑 AND SPICES plus a dark roast coffee. Today I’m celebrating 2 months of daily breakfast smoothies and every single day my breakfast looked like this, or it was pure green or milky yellow or orange. It was either sweet, spicy or both. Sometimes it tasted like spring, other times like summer or autumn, some days it even tasted like all seasons together. 
Fresh. Simple. Natural and Healthy.

Sometimes a few nuts can make a big difference. Just make sure you soak them in warm salty water for at least 4-6 hours, especially if you eat too many too often (like I do 😀). The soaking process will remove some of their anti-nutrients and you’ll get to live longer 🙏😀

Once soaked you can dry them using a dehydrator or in the oven, just make sure to use the lowest temp possible (I use around 50 deg Celsius when I dry them in the oven). If you skip this step then you’ll have to consume them in a matter of hours or they will eventually catch some mold.

Made with potatoes, sweet potatoes, carrots, bell peppers, onions, celery stick, jalapeños, parsley or dill, Himalayan salt and a few garlic cloves. Sometimes I add squash to it but not necessarily. Boil all the ingredients for a few minutes and serve hot! For an extra flavor add fresh lovage 👍

The cheese on the right side is Beaufort cheese, made from raw milk (👍). Next we have hard boiled eggs, free-range (👍).

Moving to the right we have raw cream (👍) ... we use this one all day long, from cooking to making whipped cream or eating it plain raw. Here we’ve add it to the coffee aka #bulletproofcoffee.

Last one is my fav thing in the world (well ... at least today): homemade liver paté (👍) ... that’s homemade, aka free from additives, preservatives or other unhealthy ingredients.

Yes! We have croissants that are store brought (👎) but, at least we skipped the bread. These croissants were full of butter and they went very well with the paté and the cheese so it was worth it ... #foodfreedom

GREEK SALAD

I was feeling hungry for a simple Greek 🇬🇷 style salad w/ white cheese and olives, so I put it together myself in under 10 mins.
.
Here’s how you can prepare yours:
1️⃣ Gather together the following: green salad mix (iceberg salad, carrots, red cabbage), cherry tomatoes, kalamata olives, EVOO, white cheese (sheep or goat or both), hemp or chia seeds.
2️⃣ Place all the dry ingredients in a bowl or large plate, making sure to cut the kalamata olives in half and to mix the hemp seeds with the other ingredients.

RECOVERY REAL FOOD

I walked around 20 km today in the cold November autumn (4-5 Celsius outside and going way down next week). When I came back my wife had put together this wonderful meal: white rice, beef and pork meatballs plus a solid homemade salad.
Talking about the salad, it was prepared with the following ingredients:
- iceberg lettuce
- scallions
- green bell pepper
- cherry tomatoes
- kalamata olives
- chia seeds
- hemp seeds
- lots of EVOO Kalamata @gaeaproductssa
.
PS: I noticed I had an allergic reaction to scallions ... kind of severe: I had throat itching, couldn’t breath properly for like an hour, my nose was swallowed on the inside, I had mucus dripping plus I could’t breath through the nose (cause it was swallowed). I developed it after taking just a few bites from that spring onion (scallions). I also noticed this with normal red onions brought from the same store. 
Could this be an allergy, a reaction to a special kind of onion or maybe a chemical used in the production process?! 😐

It was a full day for us, we had to pack, move to a hotel and unpack. All in the same day. So this #primal dinner was put together in 5 min (yes, we cooked the stew yesterday! Duh 🙄) and the beer was sooo cold 👍

Throwback time to our long stay in a #Bucharest hotel, this is how a #paleo #primal dinner looked like ... yes, those pasta are not paleo or primal friendly but that is my #foodfreedom. Besides, we have just gotten back from the usual 12-15 km walk so the pasta + cheese act as a quick recovery meal (we don’t recover with corn glucose anymore, duh!).

- top: pickles + duck breast cooked

As I child I used to love pears, for me they were the kick of the fruits season, together with grapes. I grew up in Romania and the pears were sweet and full of flavuor. We didn't need anything else really, just fruits and sun.

These days, pears are shipped from South Africa or Argentina, they changed their colour from orange to a green-yellow and they do not have any taste, period!

But that's where locally grown comes in. We can still have our childhood pears while they're in season. These are locally grown, they basically have the same taste as I remember them and they seem to only last a few days at room temp so they're ✔️

STEAK, POTATOES & RAW CREME SAUCE

This was a late snack for me and it was just delish. What sets this apart from all the other steak + potatoes combinations out there (well, most of them at least!) is the following:
✔️ my beef steak was cooked in #lecreuset cast iron using lots of butter
✔️ my potatoes were cooked in the oven using lots of butter, no oxidized oil, no trans-fats (it was actually raw butter)
✔️ my sauce is made from raw creme (creme crue) using only chopped garlic, Himalayan salt and a bit of EVOO. That’s it and nothing more!
.
So anyway, on top of this, I served the potatoes cooled and w/ a fat source which means I actually ate resistant starch; in translation, I’m feeding the good bacteria inside my intestines with prebiotics. Talking about healthy gut flora ...

CHOCO-BERRIES SMOOTHIE . This was the best smoothie I've made so far. No question about it! I know I've said it before but this one tops all the other wonderful smoothies out there. Let me tell you why ... . First of all, it was full of blueberries. Second of all, it had that creamy chocolate taste. And last, but not least, it was full of healthy fats so no hunger until late today. . Check out my recipe below. These quantities will give you 3 big glasses. RAW WHIPPED CREAM

We were having some homemade whipped cream last night and I wanted to show you guys how easy it is to whip that cream in under 2 minutes, providing you have the right ingredients of course 👇

If you manage to find raw creme made from raw milk, you're all set. If you don't, you can always try the pasteurized heavy whipping cream (the one you can buy in the store) but the flavour and the health benefits won't be the same. My advice, shoot for the raw creme, it's totally worth it! ✔️
.
Here's how I prepare my whipped cream:
1. Make sure the cream has been in a fridge and it's cold enough. Cream that's not cold will not end up having that nice creamy texture.
2. Add the cream into a mixing bowl. Make sure the bowl is either at room temperature or cooler, we want it to keep the cream cold enough. 
3. Use the following ingredients - raw cream (3 Tsp), coconut sugar (1-2 tsp), vanilla and cinnamon extracts.
4. Begin whipping using either a manual tool or the kitchen robot. Either way, it should be done pretty quick, just make sure you stop when the texture is creamy enough. If you'll whisk a bit longer, you risk to ruin it and we don't want that, don't we?!
5. Enjoy with coffee, on top of you favourite #paleo dessert or by its own. I personally eat this as a snack, by its own, with a teaspoon.

GREEK STYLE STEW

While technically not a Greek stew, this is served as a Gyros so I guess it qualifies for the title 😀
.
What you see here is my onion and beef stew alongside oven baked green beans, mushrooms and sliced potatoes. Served with greek style goat’s yogurt (chopped garlic, prepared w/ pinch of Himalayan salt and EVOO) and wrapped in a traditional style bread.
.
The stew is cooked in coconut oil, with French grassfed beef entrecôte, red onion, red bell pepper, one golden apple, spices and Himalayan salt. Once the meet is done, the stew is done ✅
.
I can only add that it was so unimaginably amazing! It cooks in under 60 min, from nothing to served dinner👌

I prepared this special smoothie for my wife, @cristinazoicadumitru, she’s having a hard time with a tooth and so she needs all the help she can get, even if this means a #greensmoothie

Here’s what this wonderful sweet smoothie is made of:
- 2 avocados
- 2 medium sweet & sour apples
- 1 organic carrot
- 200-250g light boiled organic spinach (cooled)
- 1 celery stick
- fennel chopped
- 1 tbsp hemp protein powder
- 1.5 tbsp extra virgin coconut oil
- 1 tsp grated ginger
- pinch of Himalayan salt
- water
- last, but not least, I’ve decorated my smoothie w/ pecans and chopped cacao nibs

Healthy real homemade smoothie prepared with  the following ingredients. Hint: it’s full of healthy fats!
Note my quantities will get you 3 servings like the one pictured. Here goes:

- 1.5 cellery stick
