My favorite time of year is quickly approaching. I love September for so many reasons! When I was a teacher I would spend these last weeks of August preparing my classroom, anticipating new students and organizing everything! Although I am no longer a school teacher, I am momma of 3 and with that comes ALOT of organizing and getting them ready for a successful school year.
One thing I know for sure is that when the home is in order and meals are well planned for the week... it makes our days happier and simpler!
For the past 4 years now I have shared many recipes with you all in hope that is brings ease to your days and your kitchen!
Here is a staple recipe that can be done in a skillet or the Instant Pot if you have one. You can put over rice, pasta or on a roll. You can vary the type of sausage you use, here I am using Natures Promise Chicken Sausage for a healthier option.
3 tablespoons olive oil
5 chicken sausage links, sliced
2 cloves garlic, minced
1 small red onion, cut into large chunks
1 small red bell pepper, cut into large chunks
1 small yellow & orange bell pepper, cut into large chunks
2 cups of sliced mushrooms
1/2 teaspoon Italian seasoning
1/2 teaspoon crushed red pepper flakes
sea salt and black pepper, to taste
In a large skillet over medium heat, heat the oil
Add the chicken sausage, garlic and onion to the skillet and saute for 10 minutes.
Add, bell peppers,onions, mushrooms, Italian seasoning, red pepper flakes, sea salt and pepper to the pan and saute for an additional 10-15 minutes or until vegetables are crisp tender.
Heat oil in bottom of pot and saute sausage. Add all ingredients Put on high pressure for 25 minutes. For this variation, I do add one can of diced tomatoes.
