With all those Memorial Day parties and BBQs coming up this weekend, I wanted to share a few things for you to think about: (1) If you want to indulge, do it. (2) Enjoy each bite without guilt or shame but (3) eat only the amount that your body is actually physically hungry for. (4) Remember, this isn't your last meal on Earth and you aren't serving your body if you eat more food than it needs. (5) If you're hosting or you've been asked to bring something, think about adding in one (or many) healthy and delicious dishes too (I promise you'll be happy you did) -- like my new Green Everything Salad that's being featured on @shape (link in bio)! It's got arugula, avocado, asparagus, snap peas, fresh mint and a yummy lemony vinaigrette -- it's the perfect side for basically everything! :) Anyway, I hope this was helpful and I wish you the best holiday weekend! xo

made these adorable brownie bites for my niece who turned 1 last week! she loved them and so did everyone else. i adapted the recipe from @chocolatecoveredkatie ‘s black bean brownie recipe (best ever, for reals) you seriously would never know they have black beans in them and flourless. i added sprinkles to these go be festive 🎉🎂 but normally i add a swirl of peanut butter or sprinkle some nuts on top. such a great treat! have you tried black bean brownies before?

As someone wise once remarked, "Cake Rules Everything Around Me" (pretty sure that's an exact quote, right?).

Okay. Not EVERYTHING, but recipes like this one (coming someday in the SL cookbook!) are on the top of my mind lately--starting the process of getting a cookbook written, shot, marketed & sold is pretty much dominating my world right now. I've had some big, wild dreams in the last decade or so, and I've even made a few of them come true (oh hi there two cross-country moves, finding the love of my life, and starting a family!), but in terms of my career goals things have always been a little harder to define. Even on my best day, the details of my five-year plan looked a little fuzzy to me before 2018. One goal that has always been at the top of all my lists, though--create a cookbook! I'm honestly probably more afraid of this process than I was of the process of childbirth (and this project will probably take longer, haha), but I'm shaking off my fears and getting excited to dig in and do the work. Coming in 2019, a volume of 100+ brand-new, original recipes that I'm hoping will inspire you to invite your friends & family to the table and make you kitchen your new favorite restaurant! Take this vanilla pound cake with lime-basil curd, for example, which right now is inspiring me to get back in the kitchen and make yet another vanilla pound cake with lime-basil curd. Because CAAAAAKE.

Earlier in the month we celebrated my grandmother's 95th birthday.  Obviously, 95 is a big deal and worth a celebration.  A few weeks prior to her birthday, I asked my grandma what she was "wishing" for, for her birthday.  Normally, I like to give my family meaningful gifts, but what do you get a 95 year old?  Her answer was simple, a homemade carrot cake. Popovers anyone? So yummy, so easy, it’s definitely a special treat! Here’s the recipe which serves 4: // Ingredients //
2 eggs 
1 cup milk 
1 cup flour 
1/4 tsp salt 
1 tbsp melted butter // Instructions //
Pre-heat oven to 450 degrees with popover pan in oven.
Beat eggs, add milk together. Add in melted butter.
Sift flour and salt together and add it to the wet ingredients. Beat until smooth.
Once oven is pre-heated, remove hot pan from oven, grease muffin tins with cooking spray, and fill 2/3 full.
Bake at 450 degrees for 20 minutes. Then reduce heat to 350 degrees and bake an additional 15 minutes.
Let it cool. Then brush some butter and sprinkle with desired sugar. If you have a syringe, you can always fill it with jam which I did - fresh raspberry jam 😜

If we don’t eat like this at least once or twice a week in my house, things start to get a little haywire. Between all the other less healthy things we eat throughout the week, the all veg reset dinner is pretty key for me. And the best part - all 4 of us actually ate the same thing tonight! 
The bowl is brown rice with crumbled fried tempeh, lots of green veg, avocado, and an Asian style dressing that my husband has been making since long before we even met. I can never quite duplicate it. 
The little bowl that looks like green mush 😂 is my new food revelation that I can’t stop eating - @clarkbar’s smashed Persian cucumbers with a soy and sesame oil based dressing. So much crunch and flavor and the smashing of the cucumbers is pretty brilliant. The dressing gets in all the nooks and crannies. You definitely want to make this. 👌🏻

Hey, friends! 👋🏼 some of you are new around here so I wanted to introduce myself.

I’m Jaime, dietitian and health coach, and I am obsessed with veggies… which you already know if you’ve had a meal with me. Like, gimme alllll the veggies!

I hide dark chocolate throughout the house from my people. Yep, guilty 🙋🏼‍♀️ You will not see any avocado on my feed thanks to a major food intolerance. And because avocado is an IG superstar I mourn it’s loss as I scroll on the daily. Too dramatic? 
I’m mama to three boys...all with F names. Yea, we’re that family. 
Nutrition is so personal to me… it has helped me through eating disorder recovery (sounds counterintuitive but choose the right foods and something beautiful happens…your mindset changes), infertility (hello, 3 boys!), overcoming a developmental delay in one of my boys (he is now thriving and gifted) and so much more!

Food is medicine, food is fuel, food is life-sustaining. And maybe most importantly, food is to be enjoyed and not something to stress over or battle with.

when I was little I loved a book called “Nettie Spaghetti” — Nettie’s mom would hide her veggies under her spaghetti to get her to eat them. I always wanted my mom to do this too. as an adult, I don’t need to be tricked into eating my greens (I like them AND I know why eating greens is good), but I still love using pasta as a veggie vehicle! also, @annieshomegrown mac and cheese is the REAL DEAL! made these whole wheat shells with white cheddar cooked with peas and sautéed green beans/spinach on the side 👌🏼 does anyone else hide their veggies in pasta?! happy wednesday 🤓 #cookbookish

I’m not really a late night baker but last night my baby son and I ate and peeled peaches together until his bedtime and in the morning he woke up to a peach crisp crumble cobbler thing - Served warm with whipped cream.

The filling had about 4 pounds of peaches, 1 tablespoon arrow root, lemon juice, sugar and peach jam. I grew these!

I swear I’ve never had a green thumb, but growing my own fruits, veggies, and herbs has too many benefits to pass us. For starters have you ever heard the term “earthing?” It literally means connecting with the earth, ie the dirt and in a day and age when we are constantly on our phones and computers, getting dirty is more vital than ever. 
Need more incentive? Health expert @medicalmedium constantly reminds us of the detoxifying benefits of fresh herbs like cilantro and parsley. I’m not perfect, I had Chex mix for lunch (homemade and gluten-free) but I at least followed that with several bites of rain washed herbs straight from my garden.

On top of that, if you buy the plants young instead of planting from seed, all you have to do is make sure they get sun, water, and good soil. It’s so easy! 
One of my favorite parts about being a part of the @riceuniversity community is how much I have learned to love to garden while working here.

I bought all of these lovely plants at the campus Farmer’s Market. My co-workers and I all cover our desks with plants. And we found an abandoned garden on campus that we go each day and water.

I love knowing just how the food I eat from my garden was grown. And the excitement when a new pepper or tomato is ready to be plucked from its stem. 
I go outside to water them in the morning or at lunch and eat some fresh parsley and cilantro ever single day. •

In the meantime, I bring you a hearty quinoa salad with Berbere-spiced sweet potatoes, burrata cheese, micros, and a few heaping spoonfuls of ramp oil. Recipe:
•
Preheat your oven to 350 degrees.
•
On a sheet pan, drizzle a few tablespoons of Lucini’s Everyday Extra Virgin olive oil over two peeled and cut sweet potatoes. Toss with the oil, and then sprinkle with 1-2 tablespoons of Berbere seasoning (feel free to replace with another warm spice, eg. Cumin). Season with a pinch of salt, and roast in the oven, turning once, for 30-40 minutes until soft and slightly charred at the edges.

While the sweet potatoes are roasting, cook 2 cups of quinoa according to package directions, and when finished, drizzle with a few tablespoons each of Lucini’s Everyday Extra Virgin olive oil and red wine vinegar. Season with a pinch of salt to taste, and set aside.

Make the ramp oil by finely slicing the white and green parts of 3-4 ramps and placing in a bowl with a pinch of red pepper flakes, and enough of Lucini’s Everyday Extra Virgin olive oil to cover. Add a splash of red wine vinegar, a pinch of salt, and stir. Feel free to replace ramps with scallions.

When the potatoes are done, assemble the dish by mounding the quinoa in the center of one large (or several smaller) plate(s). Pile the sweet potatoes over the top, add a half round of burrata in the center, and spoon the ramp oil over the top. Season with a touch more flake salt, and garnish with a bunch of micro greens and/or herbs. Enjoy!

Happy 🐫 day! Man it’s been a good one. I got up early to do a little work, stretching & devotional/journaling and then headed to play in the creek and watch 🐸 with my favorite 2 year old (babysitting brings me SO much joy)! My daughter *loves* parfaits! Apologies for not being in the kitchen lately guys! My parents are still in town + I’ve been trying to soak in the city after last week’s craziness. Last night we saw @wecomefromaway which was such an incredible musical + made me proud to be Canadian 😅 - have any of you seen it?! Once you pop, the fun don’t stop! — freshly popped popcorn🍿 is the perfect rainy day (or evening) snack! 🌽🌽🌽
Do this: 👩🏽‍🍳
*Melt about a tablespoon of coconut oil in a large pot
*Pour kernels into the pot so that the bottom is covered — heat on medium high
*Cover pot with a glass lid so you can see what is going on and once the first kernel pops turn off the heat and move the pot back and fourth over the burner (these instructions are for an electric stovetop— with gas you may have to keep the heat on a very low flame)
*one all popped sprinkle with salt and enjoy!
