Washed - fully washed - parchement dried - via unida. These are all synonyms for the same process.
This video from @goldmtncoffee is showing part of the washed process.
Ryan Brown, author of @dearcoffeebuyer : "The washed process is an umbrella for any approach that removes all the fruit skin and mucilage from the seed within a few days through "pulping" and washing." @wouter.coffee continues: In the "channels" demucilaged/pulped cherries are washed. This separates the seeds in parchement from the cherries. At the same time pre-sorting takes place by removing the low density ("floaters") beans.
Ripe/unripe sorting is done at a later stage. Unripe cherries and floaters are not the same.
This proces was first used in the 1850's in Jamaica and was called: "West Indies Process" This process allowed for a focus on costs and volume.
Washing usually continues untill the water is clear, a sign that the coffee is clean. The whole proces can also take place in fermentation tanks. Channels are not necessary.
After the pulping, fermentation and washing drying takes place. This can be sun drying, shade drying, mechanical drying or a combination of those drying methods.
Drying continues untill beans in parchement reach around 11% moisture content before being stored in parchement.
Hulling (the removal of parchement) usually takes place when the coffee is sold and prepared for transport. After hulling additional grading steps take place.
A recent innovation is to nitrogen flush the grainpro bags that are used to pack the beans for export.
A major challenge of the washed process is potential water pollution. 1 tonn of clean coffee produces the same amount of waste water as the daily pollution load of domestic sewage output of around 2000 people.
