Need a quick and healthy breakfast idea or an energizing snack? 🤔There's nothing like a bowl of granola that yields a satisfying crunch. The problem is, most prepared granolas are full of saturated fats and preservatives to keep it shelf-stable.
My healthy granola recipe is naturally sweetened with maple syrup and includes healthy fats. High-quality coconut oil is my not-so-secret ingredient to keeping it crisp and irresistible.
Here's how to make it!
4 cups old-fashioned gluten-free rolled oats
½ cup chopped walnuts
½ cup pepitas
1 teaspoon Himalayan pink salt
1 teaspoon cinnamon
½ cup melted coconut oil (I use one by @alphahealthproducts because it's fair-trade and hand-pressed to preserve nutritional value)
½ cup maple syrup
½ cup dried fruit (I used dried cherries, blueberries and cranberries)
½ cup sulfur-free coconut flakes
1️⃣Preheat oven to 350 degrees Fahrenheit and line a large baking sheet with parchment paper.
2️⃣In a large mixing bowl, combine the oats, nuts, seeds, salt and cinnamon. Stir to blend.
3️⃣Pour in the oil and maple syrup. Mix well, until everything is lightly coated.
4️⃣Pour the granola onto the baking sheet and spread it in an even layer. Bake until golden, about 21 to 23 minutes, stirring halfway. Add the coconut flakes at the halfway point.
5️⃣Let the granola cool completely, undisturbed, before breaking it into pieces and stirring in the dried fruit.
Store the granola in an airtight container and see how long it can last!
