Can I please press the pause button? Time is passing by way to quickly for my liking. Nima and I are doing our best to cherish each phase with this precious little girl. What an amazing experience!

I can’t lie, I totally ripped off this side dish idea from Zupan’s Market deli section! 😬 Don’t be mad at me @zupansmarkets you know you’re my fave grocery store in PDX...my wallet tells me so! 💸😂

In my defense the only reason why I recreated this at home is because of my massive loathing of onions. Especially cold onions in salads, gak! 🤢
If you dislike those smelly slimey things as much as I do check out my onion-less version below. 👇🏽

🌱 G A R B O N Z O Kale S A L A D 🌱
1 can drained & rinsed Garbonzo beans
1 cup chopped red cabbage
2 cups curly kale
1/2 cup fresh peas
1 cup cooked quinoa
Juice from 2 fresh lemons
1 tbsp turmeric
Sea salt/pepper to taste 
1 tbsp EVOO
🍋 Mix kale & EVOO in a large bowl and massage to break down the kale. Add all other ingredients mix together and serve along side your favorite protein. 😋

Whether it be education, work, relationships, motherhood, choosing to not having children, or physical appearance....Yeah, especially that last one. I could go on & on!

Girl, if you want to let your hair go grey and that makes you feel the most natural by all means do it, but don't judge the woman beside you who enjoys getting her hair colored every month.

Maybe you want make a lifestyle change and start committing more time to exercise? YAS sister! Just be sure to ignore the women who without fail will give you their unsolicited advice.... "don't get too muscular or don't get too skinny." 🙄

• Stuff each ziplock with your favorite veggies + fruit
• Store in freezer until ready to use

Without a doubt this year has been the utmost challenging and has simultaneously brought me the greatest joy and satisfaction.

Birthdays are always a time of self reflection for me and today I reminisced about how the fear of having a baby and being a Mom plagued my mind for so many years. I was utterly freaked out and now look at me. I’m completely obsessed with Motherhood! Who knew? 🤷🏻‍♀️

Tortilla “less” soup on the docket this week in the Darabi House.

If you have an Instapot at home whip that bad boy out and get cooking! 🤤 This is a super fast & easy low carb option for lunch or dinner in bulk. BUT, If you’re a carb addict like me try serving yours up over jasmine or brown rice. 😋🍚

Directions:
• Cover bottom of Instapot with EVOO, sauté onion + 5lbs chicken until lightly browned
• Add 2qt Low sodium free range chicken broth
6 cloves garlic
2 tbsp cumin
3 tbsp smoked paprika
1 tbsp chili powder
1 tbsp cayenne
2 cans fire roasted tomatoes
1 jalapeño
1 poblano pepper
• Cook on manual for 25 min
• Serve up with fresh cilantro and avocado (that I forgot before I snapped the photo, duh! 🥑)
