Well hot dayummmm. Happy Frickin Friday.  Got lots of messages about this insane honey glazed chicken I made last night so posting here. 
Start with organic chicken thighs and wings from @wholefoods. After cleaning, dry off and place in a large mixing bowl. Season with EVOO, pink salt and pepper. Bake on 425 for about 30-40 minutes (or until very lightly browned). Flipping half way. 
While it’s cooking, in a pan, mix together approx 1/4 cup raw honey, couple tbsp’s of EVOO, salt and pepper. Heat and simmer until mixed well. 
Remove chicken from the oven and glaze each side with honey mixture and then put back in the oven and bake for another 5-10 depending on how crispy you like your wings. 
These were melt-in-yo-mouth good!!!! Have a great weekend everyone. .

Thinking about my spaghetti squash and meatballs for dinner tonight. Easiest recipe there is! 
To bake the spaghetti squash, start by microwaving the squash for 3-4 minutes to soften and then cut in half lengthwise. Remove the seeds and then season with  Avo oil, garlic salt and cinnamon. Place open side down on a baking sheet and bake on 375 for 25 minutes. Then scrape out the squash. 
The meatballs pictured here are home made - 1 lb ground turkey meat, 1 egg, a handful of @iansfoods GF bread crumbs, some ketchup, some bbq sauce and a dash of nutritional yeast. Eyeball quantities - I don’t usually measure. Bake on 350 for 45 mins or until lightly browned. 
Top the spaghetti squash with some @raoshomemade marinara and a few meatballs and VOILA, dinner is served. 
Mouth is watering just thinking about this. .

It’s Taco Tuesday and these babes are not to be missed. Get the goods, and carve out 15-20 mins to make the best damn tacos you will ever have. 
Two @sietefoods cassava flour tortillas toasted on the stove, topped with @kitehillfoods chive cream cheese, organic grass fed ground beef (seasoned in the cast iron with @lawrysseasoning, a dash of taco seasoning from @traderjoes and a tbsp of organic ketchup - also from @traderjoes). Topped each with Avo chunks, and @sirkensingtons Vegan Chipotle Mayo, which has basically changed my life.  Not exaggerating. 
Paired with a side of @farmhouseculture Organic Jalapeño Kraut. Make it even more delicious and pile the kraut on top of each taco before sinking your teeth into it. ⚠️: This may be messy, but I promise well worth the mess.  Enjoy!

I can’t really Monday today. Still stuck on Sunday and day dreaming about this GF sandwich I made for @mitchhyatt and myself poolside at my sisters house. Details are simple - we showed up ravenous and grabbed a few things and threw them all together. I love staying home on weekends and making lunch. It doesn’t happen often because of sports and kid commitments but when it does, I love it. Yesterday I whipped up some zoodles with @traderjoes vegan pesto (because all of the basil in my yard got attacked by squirrels), and garlic salt. Two @vitalfarms fried eggs with pink salt and crushed pepper. Total perfection and hit the spot.

I woke up today craving @jemorganics Superberry Almond Butter - which doesn’t really taste like berry at all. It tastes like silky, almond, chocolatey goodness. Loaded up my @canyonglutenfree toasted bagel with @organicvalley ghee, Avo chunks and some #jemorganics for a perfectly sweet Saturday AM. 
For the record, I get a lot of questions about ghee. Like pretty much once a day someone will ask me what it is or what kind to buy.  So, thought I would share my POV along with today’s post. I don’t know - just feeling overly honest I guess.  Everyone deserves to find good ghee!!!! I’ve been off butter using ghee for over 20 years. It comes from butter but the milk solids have been removed thru a boiling process. It is yummy and has a kind of nutty flavor. I’ve tried every kind there is. Literally, without listing brands, every single kind of ghee. I’ve even made my own. Hands down, the best ghee out there - and best consistency is @organicvalley ghee, which is sold just about anywhere. And btw, #thisisNOTanAD. 
So don’t fall into the bullshit and spend $20+ on ghee. U can get it for half the price and the quality is better and it’s the real deal.  Just saying. .

It’s Friday. I honestly can’t believe we made it here. I had such crazy days this week, Friday felt like it was so far away. Before I talk about this dream boat of a sandwich I just want to talk about something important first. Mercury is in Retrograde for two more days. Not sure if some of you have been experiencing icky moments but the good news is, it ends Sunday. Until then, if something icky comes your way, just try to move out of the way. Don’t let it affect you. Don’t let it push you down. In two days, you won’t need to worry anymore. 
Now on to this sandwich - @canyonglutenfree toasted and topped with @kitehillfoods Chive cream cheese (do yourselves a favor whether you eat dairy or not and try these cream cheeses they r insane), sliced Avo on each slice and in between, some broken up pieces of left over bacon from the AM.  That’s it. Three ingredients.

Im not going to lie, I did not come up with this idea myself. I was inspired by @shutthekaleup. Check out last nights dessert, and then repeated again for breakfast. Kids wanted to bake, and I said “who’s down to try some sweet potato pancakes”. The answer was a unanimous YES. 
Super easy and only three key ingredients. * 1 large sweet potato or 2 medium- baked, then cooled, skins removed and mashed up * 2 eggs * 2 tbsp of almond flour 
Mix together and then add in 2 tbsp of dark chocolate chips. * optional ingredients include a dash of cinnamon, some pink salt, splash of vanilla and a scoop of @vitalproteins collagen protein 
Topped with @co_yo_usa coconut yogurt and @natierrasuperfoods choc covered hemp seeds.  Just try ‘em. Breakfast. Dinner. Dessert. They r legit any time of day. .

Happy Tuesday!  Just had the best early AM yoga class to jump start my day. Now off to my office I go. 
Today will be busy so packing up some leftovers to help me to make smart food choices throughout the day. 
We all know how office snacking can get the best of us, especially in my industry (media). I’m loading up this to-go bowl with some salmon, left over shaved Brussels, butternut squash, half an Avo and some @kitehillfoods Jalapeño Cream Cheese because this cream cheese really does make everything better. .

Today’s homemade lunch after nearly two weeks on vacation mode, which means lots of splurging for me. Trying to clean myself up a bit and starting with my diet. This five minute wrap hit the nail on the head.

This marks the end of season 2017/2018 for me. It was a 40 day season for us - one that despite an overall lack of snowfall, still challenged me and pushed me. Still had some of the best moments of my life and had a handful of pretty epic days. 
It’s always so bittersweet for me. I’m excited for summer and all that’s to come, but Home is where the heart is and half my heart will always be in the snow capped mountains. 
Grateful for my @snowbird family for the great runs, memories, friendships and adventures.  Until next season.

Happy Belated Easter! 🐰 I’m trying to decompress and enjoy my last trip of the ski season. Inevitably that means being a little disconnected from social media. 
Peep my regular breakfast 🍳 before I hit the slopes each today. Yesterday we took the day off to celebrate Easter, so the sun was out and I could snap a decent photo. Two @canyonglutenfree bagel halves. One topped with ghee, pesto and a @vitalfarms fried egg over easy. The other topped with ghee, @justins maple almond butter and some bloobs, and an Easter Egg hiding in the background. 
Today we r back at it for some amazing Spring skiing and I may or may not be back on here before the end of the week.

Here’s a little real talk for all of you.  Since I usually eat so clean, my digestion is super sensitive. So anytime I splurge or bend on my normal diet, I feel it for days. These past few days, I’ve been bloated AF, had stomach issues, had face breakouts and have been super anxious at night. Go figure. Just because I post healthy meals and pretty food pics everyday doesn’t mean I’m always feeling 100%. Just telling it like it is, but remember, I only post the good looking stuff. I don’t typically share my daily stresses, nor do I get too personal on here. It’s just not something I’m that comfortable doing. But as I see my following grow (thank u), I just feel the urge to be as transparent as I can. Health and balance is a constant journey for me. I’m always searching for ways to improve my mind, body and soul. And it’s ever evolving. No two days are the same. So lately, the truth is...I feel a little unbalanced. On that note, here’s to tomorrow because maybe that will change. 
And btw, these meatballs are a new discovery. They are Colameco’s and I found them @wholefoods. They are GF and no, this is not an #ad.  I just discovered them and grabbed them this past weekend to give them a try. They are LEGIT. There are traces of dairy in the ingredients, but I went for it anyway. And loved them. Kid approved too. .

This is called post crazy ass leg day snack. Plus trying to clean out my fridge before spring break. 
This was DIVINE. Two pieces of @canyonglutenfree Rye bread toasted and topped with ghee, followed by @kitehillfoods Jalapeño Cream cheese, some spinach and radishes, Everything But The Bagel Seasoning and a dollop of @traderjoes Vegan Pesto. 
Hit. The. Spot. And do you know that radishes are one of the healthiest veggies. They are the perfect crunch to add to any Toast or salad. Loaded with Vitamin C and a number of other vitamins.  They also aid in healthy digestion, and have antifungal properties. 
Need I say more?  Happy Monday folks. .
